Main Ingredients

  • 200g fresh duck meat
  • 2 Cheongyang peppers
  • 1 Red chili pepper
  • 3 Tbsp minced onion
  • 1 Tbsp potato starch
  • 2 Tbsp cooking oil

Spicy & Sweet Sauce

  • 1.5 Tbsp soy sauce
  • 1 tsp oyster sauce
  • 2 Tbsp oligo syrup
  • 1 Tbsp minced garlic
  • A pinch of sesame seeds
  • A pinch of black pepper

Cooking Instructions

Step 1

First, cut the fresh duck meat into bite-sized pieces. Ensure to remove any gamey odor beforehand. Cutting them to a manageable size will help the sauce penetrate well and enhance the eating experience.

Finely mince the Cheongyang peppers and red chili pepper. Also, finely mince the onion. (Tip: Mince one of the Cheongyang peppers even finer than the others; this will boost the aroma when making the sauce.)

In a bowl, combine the cut duck meat with the finely minced portion of one Cheongyang pepper. Add 1/2 Tbsp soy sauce and a pinch of black pepper for a light marinade. Then, add 1 Tbsp potato starch and mix thoroughly to coat the duck pieces. Let it marinate for about 10 minutes. The potato starch helps seal in the duck’s juices, making it more tender and chewy.

Heat 1 Tbsp of cooking oil in a pan over medium heat. Add the marinated duck meat and stir-fry, ensuring it doesn’t stick together, until it’s golden brown on both sides. Once cooked, remove the duck from the pan and place it on paper towels to drain any excess oil. Set aside.

In another pan, heat 1 Tbsp of cooking oil over low heat. Add the minced garlic and minced onion and sauté until fragrant. Then, add the finely minced remaining Cheongyang pepper and the red chili pepper, stir-frying them together to enhance the aroma. Next, add 1 Tbsp soy sauce, 1 tsp oyster sauce, and 2 Tbsp oligo syrup to create the gangjeong sauce.

Once the gangjeong sauce begins to bubble, add the pre-cooked duck meat. Increase the heat to high and stir-fry for 1-2 minutes, allowing the sauce to evenly coat the duck and create a glossy finish. Be careful not to burn the sauce while ensuring it coats the duck beautifully.

Transfer the finished spicy, sweet, and chewy duck gangjeong to a serving dish. Sprinkle with sesame seeds for a final touch. This delicious duck gangjeong, a favorite for many, is now ready to be enjoyed as a side dish or a perfect drink accompaniment!
