Main Ingredients- 3 potatoes (about the size of a paper cup)
- 1/2 medium onion

First, let’s prepare the vegetables. Peel the potatoes and remove any blemishes. Slice them into semi-circles, not too thick, so the braising sauce can penetrate well. Slice the onion into half-moons as well.

Next, we’ll prepare the braising sauce and additional ingredients. Finely chop the green onion. If you’d like a spicier dish, finely chop the red or Cheongyang pepper. (The pepper is optional).

Now, let’s make the delicious braising sauce! In a bowl, combine 1/2 cup of soy sauce, 4 tsp of red pepper flakes, a generous teaspoon of minced garlic, and 3 tsp of sugar. (If you prefer a sweeter taste, you can substitute corn syrup for sugar). Add the chopped green onion and the optional pepper.

The key to perfectly braised potatoes is the ratio of sauce to water! Importantly, add 1/2 cup of water, which is the same amount as the soy sauce. This ensures the potatoes braise moistly, absorb the flavors beautifully, and create a delicious dish.
