Step 1
Today, we’re going to make spicy and sweet braised pork ribs, a dish that will make your special occasion table even more abundant. It’s the ultimate “rice thief” that will make you finish a bowl of rice in no time!
Step 2
First, it’s important to remove the blood from the ribs. Soak the pork ribs in cold water for at least 30 minutes to drain the blood. You can change the water once or twice during soaking to remove the blood more thoroughly. After soaking, rinse the ribs under running water and drain them completely. Prepare them for cooking.
Step 3
Now, let’s make the delicious seasoning sauce. In a deep bowl, pour 1 cup of broth or water. Add 3 Tbsp of soy sauce, 1 Tbsp of gochugaru, 1 Tbsp of sugar, a pinch of black pepper, 1 tsp of minced garlic, and 1 Tbsp of gochujang. Stir everything together with a spoon until well combined to create the sauce. If you taste it and find it a bit bland, you can add a tiny pinch of salt to adjust the seasoning to your preference for an even tastier result.

Arrange the blood-drained and drained ribs neatly in a wide pot. Pour the prepared seasoning sauce generously over the ribs, ensuring they are mostly covered. Cover the pot tightly with a lid. Bring to a boil over high heat, then reduce to medium heat and simmer for at least 20 minutes, allowing the flavors to penetrate the ribs thoroughly.
Step 5
After 20 minutes, lift the lid. The ribs should be simmering in a reduced sauce. Now, with the lid off, reduce the heat to low or medium and continue to cook for about 5 minutes until the sauce thickens to your liking. This process allows the sauce to become more concentrated and coat the ribs with a glossy, delicious finish. Be careful not to reduce it too much, or it might become too salty.
