There are various ways to make bibim guksu sauce, but my go-to recipe is this onion-based sauce that I’ve been making for ages. Enjoy this easy yet hearty meal with this tried-and-true sauce.

Ingredients

  • 1/2 cup pureed cooked onion
  • 5 Tbsp gochujang (Korean chili paste)
  • 2 Tbsp gochugaru (Korean chili flakes)
  • 1 Tbsp soy sauce (brewing soy sauce recommended)
  • 1 tsp minced garlic
  • 1 tsp sugar
  • A little green onion, finely chopped
  • Sesame seeds, to taste (ground or whole)
  • Sesame oil, to taste
  • Buckwheat noodles (or your preferred noodles)
  • A few lettuce leaves (for garnish)

Cooking Instructions

First, let’s make the star of the dish: the sauce! In a large bowl, combine 5 Tbsp gochujang, 2 Tbsp gochugaru, 1 Tbsp soy sauce, 1 tsp sugar, and 1 tsp minced garlic. Mix well to ensure there are no lumps. Add the finely chopped green onions and the pureed cooked onion (about 1/2 cup, thawed if frozen) to the bowl. Stir everything together until it forms a smooth sauce. Taste and adjust seasoning: add a splash of vinegar for a tangier flavor, or a bit more sugar if you prefer it sweeter. This sauce can be stored in the refrigerator for several days.

To enhance the flavor of the sauce, prepare the sesame seeds. You can add them whole, or for a richer aroma, lightly grind them before adding. We’ll add the sesame oil at the very end when mixing the noodles, so set it aside for now.

Now, it’s time to cook the noodles. Bring a large pot of water to a boil and add the buckwheat noodles (or your chosen noodles). Cook according to the package directions until al dente. Once cooked, immediately drain the noodles and rinse them thoroughly under cold running water to remove excess starch. Drain them very well in a colander. Place the drained noodles in a bowl and add about 2-3 tablespoons of the prepared onion sauce (adjust to your liking). Drizzle with a little sesame oil, then gently toss everything together until the noodles are evenly coated with the sauce.
