After being released from quarantine, the first meal I craved was Bibim Guksu! It’s been so long, I almost forgot what it tasted like… 7 days… Feeling the sun after so long feels incredibly moving… sniffle… This dish is perfect for a refreshing and flavorful meal.
Main Ingredients- 1 serving of Somyeon noodles (approx. 100g)
- 1/2 hard-boiled egg (for topping)
- A little cucumber (thinly julienned)
- 3 Perilla leaves (julienned)
- A little Kimchi (finely chopped)
- 1 Tbsp sesame oil (for tossing noodles)
Special Bibim Sauce- 2 Tbsp sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce
- 2 Tbsp Vinegar (rice vinegar recommended)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- A little toasted sesame seeds (crushed for enhanced aroma)
- 2 Tbsp sugar
- 1 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Soy Sauce
- 2 Tbsp Vinegar (rice vinegar recommended)
- 1 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Sesame Oil
- A little toasted sesame seeds (crushed for enhanced aroma)
Cooking Instructions
Step 1
First, let’s prepare the special sauce that will define the flavor of your Bibim Guksu! In a large bowl, combine 2 Tbsp sugar, 1 Tbsp Gochugaru, 1 Tbsp soy sauce, 2 Tbsp vinegar, 1 Tbsp Gochujang, and 1 Tbsp sesame oil. Mix them thoroughly. For an extra burst of nutty aroma, lightly crush some toasted sesame seeds and add them in. Stir well until all ingredients are evenly incorporated.
Step 2
Prepare the fresh toppings for your Bibim Guksu. Wash the cucumber thoroughly and julienne it thinly. Wash the perilla leaves and also cut them into similar length juliennes. Finely chop the kimchi to your desired bite size. Chopping the kimchi finely helps it absorb the sauce better, making it more delicious.
Step 3
Now it’s time to cook the somyeon noodles. Bring a generous pot of water to a rolling boil, then add the somyeon noodles. Cook for about 3-4 minutes, then immediately rinse them under cold running water. This step removes excess starch and ensures the noodles remain firm and springy. Rinsing in cold water prevents the noodles from becoming mushy and maintains their chewy texture.
Step 4
Drain the cooked noodles well and transfer them to a mixing bowl. Add 1 Tbsp of sugar and toss the noodles to coat. This step lightly sweetens the noodles, allowing the sauce to penetrate more effectively. The sugar also helps prevent the noodles from sticking together as they cool.
Step 5
To the noodles coated with sugar, add another 1 Tbsp of sesame oil. Gently toss the noodles again to ensure they are evenly coated. The sesame oil prevents the noodles from sticking and adds a wonderful nutty fragrance. Imagine giving each strand of noodle a coat of sesame oil as you mix.
Step 6
Now for the most exciting part: mixing in the sauce and kimchi! Add the prepared special sauce and the chopped kimchi on top of the noodles. Mix everything together vigorously, ensuring the sauce coats every strand of noodle evenly. If you feel the sauce is not enough, add a little more to adjust the seasoning to your preference.

Finally, beautifully arrange the fresh toppings to complete your delicious Bibim Guksu! Artfully place the julienned cucumber, perilla leaves, and the halved hard-boiled egg on top.
