How to Make Delicious Korean Beef Tartare with a Gochujang-Based Sauce
I made some delicious beef tartare! This recipe features fresh, tender beef coated in a savory and slightly sweet gochujang sauce, perfectly complemented by crisp pear and cucumber. A delightful appetizer or light meal.
Main Ingredients- 220g fresh beef, suitable for tartare (Yukhoe-yong)
- 1/4 pear
- 1/2 cucumber
- A small bunch of radish sprouts
Spicy & Sweet Sauce- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
- 2 Tbsp oligosaccharide (or corn syrup/honey)
- 2 Tbsp sesame oil
- 1.5 Tbsp gochujang (Korean chili paste)
- Pinch of black pepper
- 1 Tbsp minced garlic
- 1 Tbsp toasted sesame seeds
- 1 Tbsp soy sauce (Guk-ganjang or Jin-ganjang)
- 2 Tbsp oligosaccharide (or corn syrup/honey)
- 2 Tbsp sesame oil
- 1.5 Tbsp gochujang (Korean chili paste)
- Pinch of black pepper
Cooking Instructions
Step 1
Begin by preparing the pear. Peel the 1/4 pear and then slice it thinly into matchsticks. This will add a refreshing crispness and a hint of sweetness to the tartare.
Step 2
Next, prepare the cucumber. Use a vegetable peeler to carefully remove strips of the skin (this is called ‘dolyu kkaekgi’ and helps remove some water), then slice the green flesh into thin matchsticks. Avoid the watery seedy core.

Wash the radish sprouts gently under cool running water. Trim the roots slightly so they are neat and tidy. This step ensures the sprouts are clean and ready to add a fresh, slightly peppery garnish.
Step 4
Now, let’s make the star of the dish: the gochujang sauce. In a small bowl, combine the minced garlic, toasted sesame seeds, soy sauce, oligosaccharide, sesame oil, gochujang, and a pinch of black pepper. Mix everything thoroughly until well combined. Taste the sauce and adjust the sweetness or saltiness to your preference. You can add a little more oligosaccharide for sweetness or soy sauce for saltiness.
Step 5
Take the fresh beef designated for tartare. Use clean paper towels to gently pat and absorb any excess moisture or blood from the surface of the meat. This is crucial for a clean flavor and a good texture.

Add the prepared gochujang sauce to the beef. Mix everything together quickly and gently. Since it’s raw meat, avoid prolonged contact with your warm hands as this can affect the texture and quality. Using chopsticks or tossing it swiftly ensures the meat stays fresh and the sauce is evenly distributed.
Step 7
