  • 1 Tbsp Soy sauce (Jin Ganjang)
  • 0.5 Tbsp Oyster sauce
  • 0.5 Tbsp Brown sugar

  • 2 Tbsp Cooking oil
  • 60ml Noodle cooking water (reserved from boiling udon)

Cooking Instructions

Prepare all your ingredients before you start cooking; this will make the process much smoother. Gently pat any excess liquid off the beef brisket with a paper towel.

Slice the green onion diagonally into about 0.5cm thick pieces. Finely chop the Korean chili pepper after removing the seeds. Peel and thinly julienne the fresh ginger.

Bring a generous amount of water to a boil in a large pot. Once boiling, add the udon noodles and blanch them just until they loosen up and separate, about 30 seconds to 1 minute. Be careful not to overcook, as they will become mushy! Drain the noodles immediately without rinsing them under cold water. Reserve about 60ml of the noodle cooking water; this will be used later to help create the sauce.

Heat a deep pan or wok over high heat and add 2 tablespoons of cooking oil. Once the pan is sufficiently hot, add the julienned ginger and sliced green onions, stir-frying until fragrant. As soon as the aroma of the green onions rises, add 1 tablespoon of gochugaru and stir-fry for about 10 seconds. Be careful not to burn the chili flakes, as this can result in a bitter taste.

Add the prepared beef brisket to the pan, breaking it apart with your cooking utensil. Stir-fry for about 1 minute until it’s cooked through. The beef will render its delicious fat as it cooks.
