We often stir-fry pork and kimchi, but this time I tried Jeyuk-bokkeum using Baek Jong-won’s recipe. It’s also a perfect pairing with soju. Simmering it with water turns it into a kimchi version of doenjang jjigae! ❣️

Ingredients

  • Pork 300g
  • A bowl of aged kimchi (about 1 cup)
  • 1 Tbsp cooking oil
  • 1/2 onion
  • A handful of chopped green onions
  • 1 Cheongyang chili pepper (spicy chili)
  • 150ml water

Seasoning

  • 2 Tbsp minced garlic
  • 3 Tbsp red chili powder (gochugaru)
  • 5 Tbsp soy sauce

Cooking Instructions

Step 1

Prepare about 300g of pork. Pork neck or shoulder cuts are recommended for a tender and flavorful result.

Cut the prepared pork into bite-sized pieces. Small, manageable pieces are best.

Prepare about one bowl (roughly 1 cup) of aged kimchi. Using sour, well-fermented kimchi will significantly enhance the flavor of the Jeyuk-bokkeum!

Before stir-frying the pork, let’s make the delicious sauce. First, prepare 2 tablespoons of minced garlic.

Next, add 3 tablespoons of red chili powder (gochugaru). If you are using a very spicy variety, consider reducing it to 2.5 tablespoons. (We used spicy gochugaru, so we only added 2.5 tablespoons.)

Finally, add 5 tablespoons of soy sauce for a touch of sweetness and saltiness. Mix everything well to create a smooth seasoning paste.

Now it’s time to stir-fry! Lightly coat a pan with 1 tablespoon of cooking oil and let it heat up.

Once the pan is hot, add the prepared pork and stir-fry over medium heat until it’s lightly browned on the outside. This step helps to seal in the juices.

As the pork cooks and changes color, pour in all of the prepared seasoning sauce. Stir well to coat the pork evenly with the sauce and continue to cook.

Once the pork is well-coated with the sauce, add 150ml of water. At this point, add 1/2 sliced onion and cook together, allowing the sauce to reduce and thicken. (If you prefer a more intense flavor, you can omit the onion. We omitted it to enhance the pork’s flavor profile.)

When the sauce has thickened and reduced with the water, add the prepared aged kimchi, a handful of chopped green onions, and 1 sliced Cheongyang chili pepper. Stir-fry everything together quickly until well combined for a finished Jeyuk-bokkeum!

This Jeyuk-bokkeum is fantastic on its own, but it’s truly a ‘rice thief’ when mixed with warm rice and the delicious sauce. Wrapping it in ssam vegetables, especially perilla leaves, offers an even richer and more satisfying experience. Enjoy this incredibly flavorful dish!
