Spicy, Sweet, and Savory Stir-Fried Dried Radish Greens
Stir-Fried Dried Radish Greens (Siraegi Bokkeum) – Rich Flavor with Gochujang
A delightful dish of stir-fried dried radish greens, cooked without water and infused with the savory depth of gochujang instead of doenjang. It’s a true rice-lover’s delight!
Main Ingredients- 1 bundle of pre-boiled dried radish greens (thawed before use)
Seasoning Ingredients- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Fish Sauce
- 1/2 Tbsp Sugar
- 1 Tbsp Salted Shrimp (fermented)
- 1 Tbsp Soy Sauce
- 1 Tbsp Plum Extract
- 1 Tbsp Sesame Oil
- Sesame Seeds to taste
- 1 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes)
- 1 Tbsp Minced Garlic
- 1/2 Tbsp Fish Sauce
- 1/2 Tbsp Sugar
- 1 Tbsp Salted Shrimp (fermented)
- 1 Tbsp Soy Sauce
- 1 Tbsp Plum Extract
- 1 Tbsp Sesame Oil
- Sesame Seeds to taste
Cooking Instructions
Step 1
Thaw the frozen dried radish greens, then rinse them thoroughly under running water. Squeeze out as much water as possible by hand. Cut the greens into bite-sized pieces, about 2 cm long. For a more tender texture, you can remove the tougher stems at this stage.
Step 2
In a bowl, combine 1 Tbsp Gochujang, 1/2 Tbsp Gochugaru, 1 Tbsp minced garlic, 1/2 Tbsp fish sauce, and 1/2 Tbsp sugar. Mix well until the seasonings are evenly distributed. Let it sit for a few minutes to allow the flavors to meld.
Step 3
Heat a lightly oiled pan over high heat. Add the chopped dried radish greens and stir-fry quickly with a spatula for about 2-3 minutes, ensuring constant movement. This rapid stir-frying will evaporate excess moisture and enhance the nutty flavor. Remove the pan from the heat and let it cool slightly.
Step 4
Add 1 Tbsp salted shrimp to the stir-fried radish greens and mix well. Taste the mixture and, if needed, add 1 Tbsp kelp soy sauce (or regular soy sauce) and 1 Tbsp plum extract to further enhance the flavor complexity. Drizzle with 1 Tbsp sesame oil for a rich aroma and sprinkle generously with sesame seeds to finish. (Tip: Adjust the seasonings according to your preference as you taste!)
