Make some spicy, sweet, and savory stir-fried anchovies! This recipe offers a delightful balance of flavors that is perfect as a side dish for any meal. Main Ingredients- 1 bowl of anchovies (for broth or small anchovies)
- 2 red chili peppers
- 2 green chili peppers
Seasoning- 2 Tbsp soy sauce
- 5 Tbsp corn syrup (or oligodang)
- 2 Tbsp minced garlic
- A little cooking oil

Cooking Instructions
Step 1
First, wash the red and green chili peppers thoroughly and slice them thinly. Prepare about 1 bowl’s worth of anchovies. (If using anchovies for broth, removing the guts will result in a cleaner taste. Small anchovies can be used as they are.)
Step 2
Heat a generous amount of cooking oil in a pan over medium-low heat. Add the prepared anchovies and stir-fry until they become lightly crispy and fragrant. Stir-frying them well helps to remove any fishy smell and enhances their savory flavor.
Step 3
Once the anchovies are lightly browned, push them to one side of the pan or temporarily remove them. Add 2 tablespoons of minced garlic to the pan and stir-fry over low heat until fragrant. Be careful not to burn the garlic; just sauté it gently.
Step 4
Now, add 2 tablespoons of soy sauce, the sliced red and green chili peppers, and 5 tablespoons of corn syrup to the pan with the stir-fried anchovies and garlic. Stir everything together over low heat, ensuring the sauce coats the anchovies evenly. Be mindful of the heat to prevent the syrup from burning. Continue to stir-fry until all ingredients are well combined and glossy. Your delicious spicy and sweet stir-fried anchovies are ready!
