Main Ingredients- Pre-prepped mackerel 200g
- Potato starch or corn starch 2 Tbsp
- Minced garlic 1 Tbsp
- Minced green chili peppers 1 Tbsp (adjust for spiciness)
- Minced red chili peppers 1 Tbsp (for color)
- Minced onion 2 Tbsp
- Sesame oil 1/2 Tbsp
- Cooking oil, sufficient amount (for frying mackerel)
Spicy & Sweet Sauce- Soy sauce 1 Tbsp
- Oligosaccharide 1 Tbsp (or corn syrup)
- Oyster sauce 1 tsp
- Honey 1 Tbsp (for gloss and sweetness)

Cooking Instructions
Step 1
Gently rinse the pre-prepped mackerel under running cold water and then pat it thoroughly dry with paper towels. Ensuring the fish is well-dried helps prevent oil splattering when frying and allows the starch to adhere better.
Step 2
Cut the mackerel into bite-sized pieces (about 3-4 cm). Coat the cut pieces evenly with potato starch (or corn starch). Coating thoroughly with starch will enhance the crispy texture after frying.
Step 3
Finely mince the garlic, green chili peppers, red chili peppers, and onion. Green chilies add spiciness, red chilies provide a beautiful color, and onions contribute sweetness and depth of flavor.
Step 4
Heat a generous amount of cooking oil in a pan over medium heat. Add the starch-coated mackerel and fry until golden brown and crispy on one side. Wait until one side is sufficiently cooked and golden before proceeding.
Step 5
Once one side of the mackerel turns an appetizing golden color, flip it over and cook the other side evenly. Ensure both sides are fried until crispy and golden. Frying them beforehand helps maintain crispiness even after the sauce is added.
Step 6
In a separate pan or pot, heat 1 Tbsp of cooking oil. Add the minced onion and minced garlic and sauté until fragrant, over medium-low heat. The onion will become translucent and release its sweetness.
Step 7
Once the onion and garlic are sautéed, add the minced green and red chili peppers and stir-fry briefly. Then, add the soy sauce, oligosaccharide, oyster sauce, and honey. Mix well and let the sauce simmer over medium heat until it thickens. Reduce the heat slightly once the sauce begins to thicken.
Step 8
Add the crispy fried mackerel to the sauce pan and quickly toss to coat evenly with the sauce. Finally, drizzle in 1/2 Tbsp of sesame oil and toss once more to add a glossy finish.
Step 9
Arrange the delicious mackerel gangjeong on a serving plate. Your spicy, sweet, and crispy mackerel gangjeong is ready to be enjoyed! It’s perfect with warm rice or as a fantastic accompaniment to a cold beer.
