Cooking Instructions
Step 1
Hello everyone! Today, I’m excited to share a super easy and delicious Tteokbokki recipe that you can make right at home. It’s a beloved Korean snack for all ages, known for its chewy texture and perfect spicy-sweet flavor. Shall we get cooking?
Step 2
First, let’s prepare all the ingredients for our Tteokbokki. Rinse the rice cakes under cold water to prevent them from sticking together. This simple step makes a big difference!
Step 3
The foundation of great Tteokbokki is a flavorful broth! In a pot, combine 1.5 cups of water (about 300ml) with the piece of dried kelp. Simmer over low heat for about 5 minutes to create a delicious kelp broth. Remember to remove the kelp as soon as the water starts to boil to avoid any bitterness.
Step 4
Cut the square fish cakes into bite-sized pieces, typically triangles. A slight diagonal cut with your knife can make them look even more appealing.
Step 5
Slice the sausage into your preferred size, about 1cm thick, either on an angle or round. Making small slits on the sausage pieces will help them absorb the sauce beautifully.
Step 6
Cut the green onion into large pieces, about 4-5cm long. The fresh, aromatic flavor of the green onion will add wonderful depth to your Tteokbokki. Feel free to add more if you love its taste!
Step 7
Soak the wide glass noodles in hot water for about 10 minutes before you start cooking. This pre-soaking ensures they become perfectly tender and delightfully chewy as the Tteokbokki simmers.
Step 8
Remove the kelp from the broth you made earlier. Now, let’s make the sauce: add 2 Tbsp gochugaru (Korean chili flakes), 2 Tbsp sugar, 2 Tbsp onion juice, and 2 Tbsp apple juice to the broth. Stir everything together. (You can also add 1-2 Tbsp of gochujang, Korean chili paste, for extra spice if you like!)
Step 9
Once the sauce base is ready and simmering, add the cut fish cakes first. Let them simmer in the sauce for a bit to soak up all that delicious flavor.
Step 10
Next, add the sliced sausage to the pot and let it cook with the fish cakes. The natural juices from the sausage will further enhance the overall taste of the Tteokbokki.
Step 11
Finally, add the Tteokbokki rice cakes. Stir gently to ensure they are evenly coated with the sauce. Continue to cook until the rice cakes are soft and the sauce has thickened slightly.
Step 12
Once the rice cakes are tender, add the pre-soaked glass noodles and the large pieces of green onion. Let everything simmer together for a few more minutes. The noodles will soften, and the green onions will release their aroma, creating a richer sauce.
Step 13
And there you have it – a wonderfully delicious batch of homemade Tteokbokki! The chewy rice cakes, tender fish cakes and noodles, all enveloped in that irresistible spicy-sweet sauce. Enjoy every bite!
