Experience a burst of flavor with this Spicy Stir-fried Udon featuring tender pinecone squid and a zesty sauce. This dish is perfect for a quick yet impressive meal, ideal for weeknight dinners or late-night cravings!
Main Ingredients- 1 portion Udon noodles
- 12 Pinecone squid (cleaned)
- 1/2 Onion
- 1 Korean chili pepper (Cheongyang)
- A little Green onion
- A little Carrot
Seasoning- 1 Tbsp Oyster sauce
- 1 Tbsp Chili oil
- 1 tsp Oligodang (Korean corn syrup)
- 1 small piece Butter (approx. 10g)
- Pinch of Black pepper
- Pinch of Salt

Cooking Instructions
Step 1
First, prepare the vegetables. Slice the green onion diagonally. Finely julienne the onion and carrot. Halve the Korean chili pepper, remove the seeds, and julienne it for a pleasant kick.
Step 2
Melt 1/2 Tbsp of butter in a heated pan. Add the julienned onion, carrot, and chili pepper. Sauté over low heat until softened. Lightly season with salt and pepper to enhance the vegetables’ aroma.
Step 3
Once the vegetables are slightly tender, add the prepared pinecone squid. Stir-fry quickly over high heat. Be careful not to overcook the squid, as it can become tough.
Step 4
Boil the udon noodles in water for about 1 minute, just until they are slightly cooked. Avoid overcooking them. Drain the noodles in a colander. Reserve about 3 Tbsp of the noodle cooking water (noodle broth) – this will add moisture and flavor to your stir-fry!
Step 5
Add the boiled udon noodles and green onion to the pan with the stir-fried squid and vegetables. Pour in the reserved 3 Tbsp of noodle broth. Now, add the key sauce ingredients: 1 Tbsp oyster sauce and 1 Tbsp chili oil. For a touch of sweetness, stir in 1 tsp of oligodang, adjusting to your preference. Finally, season with a pinch of black pepper and salt.
Step 6
Stir-fry everything together over high heat until well combined and the sauce coats the noodles and ingredients evenly. Toss vigorously with chopsticks or a spatula.
