Main Ingredients

  • 1 whole squid, cleaned
  • 1/2 onion
  • 6 perilla leaves (kkaennip)
  • Some green onion
  • Somyeon (thin wheat noodles)

Seasoning

  • 3 Tbsp soy sauce
  • 1 Tbsp minced garlic
  • 2 Tbsp gochujang (Korean chili paste)
  • 2 tsp sugar
  • 2 tsp gochugaru (Korean chili flakes)
  • 2 tsp maesilcheong (green plum syrup)
  • 1 tsp corn syrup or other liquid sweetener
  • Pinch of black pepper
  • 1 Tbsp sesame oil

Cooking Instructions

Step 1

First, let’s prepare the delicious sauce that will make the Ojingeo Bokkeum shine. In a bowl, combine 3 Tbsp soy sauce, 1 Tbsp minced garlic, 2 tsp sugar, 2 tsp gochugaru, 2 Tbsp gochujang, a pinch of black pepper, 2 tsp maesilcheong, and 1 tsp corn syrup. Mix them thoroughly. Ensuring the sauce is well combined will help the flavor distribute evenly on the squid.

Step 1

Step 2

Cut the cleaned squid into bite-sized pieces. If the pieces are too large, they might become tough when cooked, so aim for manageable, one-bite portions.

Step 2

Step 3

Add the cut squid to the prepared sauce and gently toss to coat. Let it marinate for about 10 minutes to allow the flavors to penetrate the squid, making it even more delicious.

Step 3

Step 4

Green onions add a wonderful aroma. Slice them diagonally into pieces about 1 to 1.5 cm long.

Step 4

Step 5

Prepare half an onion by slicing it into thick strips. The natural sweetness of the onion will complement the spiciness beautifully.

Step 5

Step 6

Fresh perilla leaves will add a fragrant touch. Roll the perilla leaves tightly and slice them into strips about 1 cm wide.

Step 6

Step 7

Now, let’s start stir-frying! Heat your pan over high heat and add a generous amount of cooking oil. Add the sliced green onions and stir-fry for about 1 minute until fragrant. Cooking the green onions in oil releases their aromatic compounds, enhancing the overall flavor of the dish.

Step 7

Step 8

Once the green onions are fragrant, add the sliced onion and stir-fry for another 1-2 minutes until the onion becomes slightly translucent. The onion will soften and release its sweetness as it cooks.

Step 8

Step 9

When the onion is adequately softened, add the marinated squid to the pan. Stir-fry quickly over high heat. Squid can become tough if overcooked, so aim to cook it for only about 2-3 minutes. Keep it moving in the pan for even cooking.

Step 9

Step 10

When the squid is almost cooked through, add the sliced perilla leaves and stir quickly to combine. Finally, drizzle in 1 Tbsp of sesame oil for a rich, nutty aroma and turn off the heat. For an even more complete meal, you can serve this over boiled somyeon noodles.
