Spicy Stir-Fried Squid with a Fiery Kick
Chewy Squid Dish: A Fiery and Flavorful Stir-Fried Squid Recipe
We’ve added a special chili oil called ‘Hwayu’ to create a spicy and intensely hot flavor profile. This recipe is highly recommended for those who love spicy food.
Stir-Fried Squid Ingredients- 2 squid bodies
- 1 handful of cabbage
- 1/2 king oyster mushroom
- 1/2 onion
- 1/2 green onion
- 1 green chili pepper
- 1 Tbsp sugar
- A little oligosaccharide
- 1 Tbsp cooking wine (mirin)
- 2 Tbsp Hwayu (spicy chili oil, or use regular chili oil)
Stir-Fried Squid Seasoning- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp regular gochugaru (Korean chili flakes)
- 1 Tbsp spicy gochugaru (adjust to taste)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp soy sauce
- 1/2 Tbsp Dasida (MSG-based seasoning)
- 1 Tbsp sesame oil
- 1 Tbsp minced garlic
- 1 Tbsp gochujang (Korean chili paste)
- 1 Tbsp regular gochugaru (Korean chili flakes)
- 1 Tbsp spicy gochugaru (adjust to taste)
- 1 Tbsp fish sauce (anchovy or sand lance)
- 1 Tbsp soy sauce
- 1/2 Tbsp Dasida (MSG-based seasoning)
- 1 Tbsp sesame oil
Cooking Instructions
Step 1
Use 2 squid bodies. To make them curl nicely when cooked, score the inside surface of the squid. To remove the slimy coating, gently knead the squid with coarse salt or flour. Rinse thoroughly under cold water and pat dry.
Step 2
Heat cooking oil in a pan and add the chopped green onions. Sauté over medium-high heat until fragrant, creating a flavorful scallion oil. Once the aroma intensifies, add the squid and stir-fry over the highest heat setting. Stir-frying quickly over high heat is key to keeping the squid tender.
Step 3
Add 1 tablespoon of sugar to enhance the umami flavor of the squid. To eliminate any fishy smell, add 1 tablespoon of cooking wine (like mirin) and stir-fry briefly. This helps to cook the squid partially.
Step 4
Prepare all your vegetables – cabbage, king oyster mushrooms, onion, and green chili peppers – by slicing them into bite-sized pieces beforehand. Add the prepared vegetables to the pan with the squid and continue to stir-fry over high heat. Cook until the vegetables begin to soften.
Step 5
Add the prepared seasoning mixture for the stir-fried squid to the pan. Stir-fry quickly to ensure the sauce coats the vegetables and squid evenly. Continue stir-frying for about 1-2 minutes, being careful not to burn the sauce.
Step 6
Now for the secret ingredient that adds that signature smoky flavor: add 2 tablespoons of Hwayu (or spicy chili oil) and stir-fry rapidly over high heat. The spicy kick and aroma from the Hwayu will infuse the squid and vegetables, creating an exceptionally delicious dish. You can add a little oligosaccharide for extra gloss.
Step 7
Finally, sprinkle a little black pepper. Your spicy, sweet, and fiery stir-fried squid is now ready! It’s best served immediately while hot. It makes a fantastic topping for rice or a delicious accompaniment to a cold beer.
