Main Ingredients

  • 2 Squids (small size)
  • 1/4 Onion
  • 1/4 Carrot (similar amount to onion)
  • 1/4 King Oyster Mushroom (similar amount to onion)
  • 2 Green Onions (Scallions)

Special Sauce

  • 2 Tbsp Soy Sauce
  • 1 Tbsp Fish Sauce (or Anchovy Sauce)
  • 1 Tbsp Fine Gochugaru (Korean chili flakes)
  • 1 Tbsp Coarse Gochugaru (Korean chili flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 1 Tbsp Minced Garlic
  • 1/2 tsp Black Pepper Powder

Cooking Instructions

Step 1

First, clean and prepare the squid. Cut it into bite-sized pieces. Since squid tends to be smaller these days, 2 pieces should be a good amount. Slice the onion, carrot, and king oyster mushroom into similar sizes. Cut the green onions diagonally.

Heat a pan over medium-high heat and add cooking oil. It’s important to preheat the pan well since we’ll be stir-frying quickly.

Add the sliced onion and carrot to the hot pan. Pour in about 70ml of the prepared special sauce. It’s advisable to adjust the heat to medium to prevent the sauce from burning.

Stir the vegetables and sauce with chopsticks or a spatula until well combined. Don’t worry if it looks like the sauce is burning at first; the moisture from the vegetables will help it to soften. Stir-frying over slightly reduced heat will keep it moist. The vegetable juices will help cook the sauce perfectly.

Once the vegetables are slightly tender, add the sliced squid and stir-fry together. Squid cooks quickly, so avoid overcooking to prevent it from becoming tough. The dish is almost ready when the squid turns opaque white and its shape becomes more defined.
