Spicy stir-fried squid is absolutely delicious served over rice for a delightful bibimbap-style meal, or even wrapped in seaweed! It’s a side dish that will have you finishing a whole bowl of rice in no time. Here’s a fantastic recipe for Ojingeo Bokkeum.
Main Ingredients- 2 squid, cleaned and prepared
- 1/2 onion
- 1 Cheongyang chili pepper (or other spicy chili)
- 1/5 carrot
- 1 Tbsp minced garlic
- 3 Tbsp gochugaru (Korean chili flakes)
- 2 Tbsp soy sauce
- 1 Tbsp oligodang (corn syrup) or other sweetener
- A pinch of black pepper
- 1 Tbsp cooking oil
- A pinch of sesame seeds
Cooking Instructions
Step 1
First, heat 1 tablespoon of cooking oil in a frying pan over medium-low heat. Lightly toasting the oil like this helps to enhance the flavors of the ingredients.
Step 2
Once the oil is warm, add 1 tablespoon of minced garlic. Stir-fry the garlic until fragrant, being careful not to burn it. When you can smell the garlic aroma, it’s ready for the next step.
Step 3
Prepare your vegetables: slice 1/2 onion, 1 Cheongyang chili pepper, and 1/5 carrot. It’s best to cut them into bite-sized pieces, about 1-1.5 cm thick, similar in size to the squid. This ensures a pleasant texture and appearance. If you prefer less heat, remove the seeds from the chili pepper before slicing.
Step 4
Now, let’s make the star of our Ojingeo Bokkeum – the sauce! In a bowl, combine 3 tablespoons of gochugaru, 2 tablespoons of soy sauce, 1 tablespoon of oligodang (or your preferred sweetener), and a pinch of black pepper. Mix everything thoroughly until well combined. You can adjust the sweetness to your liking.
Step 5
Add the sliced vegetables (onion, chili pepper, carrot) and the prepared squid to the heated frying pan. Stir-fry them. Once the vegetables start to turn slightly translucent, add all of the prepared sauce. Increase the heat to high and stir-fry quickly for about 1-2 minutes. It’s important not to overcook the squid, as it can become tough. Stir-fry just long enough for the sauce to coat everything evenly.
Step 6
Finally, sprinkle with sesame seeds. Your delicious spicy stir-fried squid is ready! The squid will be wonderfully chewy, and the sauce is perfectly balanced. This dish is fantastic served over a bowl of hot rice, or you can wrap it in toasted seaweed for an extra layer of flavor. Enjoy this amazing home-style dish that’s guaranteed to make you finish your rice in no time!
