I personally love squid, and I believe the simplest and most delicious way to prepare it is by stir-frying. Did you know that adding glass noodles to delicious stir-fried squid makes it even tastier? So today, we’re making a simple yet delicious Spicy Stir-Fried Squid and Glass Noodle Rice Bowl.
Main Ingredients- 1 Squid
- 1/3 Onion
- 1/2 Green Onion
- 1/3 Carrot
- 1/2 Cheongyang Pepper (optional)
- 1 serving Glass Noodles
- 1 bowl Rice
Seasoning- 1.5 Tbsp Gochujang (Korean chili paste)
- 1 Tbsp Corn Syrup (or Oligosaccharide)
- 1.5 Tbsp Soy Sauce
- 1/2 Tbsp Sugar
- 1/2 Tbsp Minced Garlic
- 1.5 Tbsp Gochujang (Korean chili paste)

Cooking Instructions
Step 1
First, let’s prepare the glass noodles. If you’ve soaked the glass noodles for over 30 minutes, you don’t need to boil them separately. However, if you’re using unsoaked noodles, boil them until they are about 90% cooked. Be careful not to overcook them, as they can become mushy when stir-fried later.
Step 2
Once the glass noodles are about 90% cooked, immediately rinse them under cold water to remove excess starch and drain them well. Set them aside. This step helps prevent the noodles from sticking together.
Step 3
Next, let’s prepare the vegetables. Slice the onion and carrot thinly into strips. Chop the green onion and Cheongyang pepper into large, bite-sized pieces. The Cheongyang pepper can be added for a spicy kick if desired.

Now, prepare the squid. Clean and cut the squid into bite-sized pieces. Avoid cutting them too small, as they will shrink when cooked.

Time to make the delicious sauce! Place the prepared squid in a bowl. Add all the seasoning ingredients: 1.5 Tbsp Gochujang, 1 Tbsp corn syrup, 1.5 Tbsp soy sauce, 1/2 Tbsp sugar, and 1/2 Tbsp minced garlic.

Gently mix the seasoning with the squid until evenly coated. Don’t worry if some liquid comes out; it’s a natural part of the marinating process. Let it marinate for a bit to allow the flavors to meld.

Let’s begin the stir-frying process. Heat the pan over high heat without oil. Add the prepared vegetables (carrot, onion, Cheongyang pepper) and the marinated squid to the dry pan.

Stir-fry quickly over high heat, ensuring nothing burns. It’s important to cook until the vegetables soften slightly and the squid changes color.

Once the onions become translucent and the squid looks plump and cooked, add 1-2 ladles of water. You can adjust the amount of water based on your preference and the heat of your stove.

As the water starts to boil, add the pre-cooked glass noodles and stir-fry them together with the squid and vegetables. Adjusting the water quantity based on how cooked the noodles are is key. If the noodles are still a bit firm, add a little more water and continue stir-frying.

Continue stir-frying over high heat until the glass noodles are fully cooked and the sauce is well incorporated into all the ingredients. Finally, add the chopped green onions and stir-fry briefly.
