How were your Chuseok holidays? If you missed traveling home, I tried to make up for it with delicious food! The expanding waistline is a problem for later. After a day of rich, oily food, I craved something spicy. So, I did a ‘fridge purge’ and made spicy stir-fried squid. It’s spicy from the morning! This recipe is simple yet bursting with savory flavor, perfect for perking up your appetite. It’s so good, you might find yourself finishing a bowl of rice in no time!

Main Ingredients

  • 2 squid
  • 5 cloves garlic
  • 2 Korean chili peppers (Cheongyang chili)

Seasoning

  • 2 Tbsp gochujang (Korean chili paste)
  • 1/2 Tbsp fine gochugaru (Korean chili flakes)
  • 1/2 Tbsp soy sauce
  • 1 Tbsp plum extract
  • 1 Tbsp cooking wine (like Mirin)

Cooking Instructions

Step 1

I decided to use the fresh squid I bought for frying during the Chuseok holiday, but since I didn’t make fried food, I’m making it into a stir-fry instead! First, clean the squid thoroughly, pat it dry, and then cut it into bite-sized pieces. Avoid cutting them too small, as they will shrink when cooked.

Heat a pan over medium heat and add 1 tablespoon of perilla oil (deulgireum). Add the thinly sliced garlic and sauté over low heat to release its aroma. Be careful not to burn the garlic; gently toasting it until golden brown will enhance its flavor.

Once the garlic is fragrant, add the gochujang, fine gochugaru, and soy sauce to the pan. Stir-fry over low heat for a moment, just enough to meld the flavors without burning the paste. Burning the seasoning can result in a bitter taste, so proceed with caution.

After briefly stir-frying the seasoning, add the prepared squid. Turn the heat up to high and quickly toss everything together (‘shake shake’!). Squid cooks very fast; overcooking will make it tough. Cook just until the color changes.

When the squid is almost cooked, add the diagonally sliced Korean chili peppers and give it one final quick stir to combine. The spicy kick from the Cheongyang chili peppers perfectly complements the squid. You’ll be amazed that such a simple dish, with just squid, the seasoning, and chili peppers, can be so delicious. Those chili peppers are the secret weapon! Serve it hot over rice for a delightful meal.
