Cooking Instructions

First, peel and thoroughly wash the 2 medium potatoes. Then, cut them into long, thin strips about 0.3-0.5 cm thick. Two medium potatoes should yield a good amount. Cutting them thinly helps them cook faster and achieve a better texture.

Rinse the julienned potatoes under cold running water 2-3 times to remove excess starch. This prevents the potato strips from sticking together during stir-frying, resulting in a cleaner dish. After rinsing, drain them well in a colander.

Slice the onion into strips similar in thickness to the potatoes. Trim the stems off the 5 Cheongyang peppers and finely chop them to add a spicy element. Feel free to add more if you enjoy a spicier flavor.

Heat a good amount of cooking oil in a pan over medium heat. Add the drained potato strips and begin to stir-fry. Gently toss them with chopsticks or a spatula to prevent sticking.
