Here’s a delightful potato stir-fry made with seasonal potatoes. While a standard potato stir-fry is always tasty, adding purple onions and plenty of spicy Cheongyang peppers elevates it to a truly irresistible side dish for rice! It’s wonderfully crisp yet tender, making it a perfect appetite-stimulating accompaniment to your meal.
Ingredients- 2 medium potatoes
- 1 medium onion
- 5 Cheongyang peppers (or to taste)
- 1/3 Tbsp salt (or adjust to your preference)
- Pinch of black pepper
- Sesame seeds, for garnish
- Cooking oil (e.g., vegetable or canola oil)
Cooking Instructions
Step 1
First, peel and thoroughly wash the 2 medium potatoes. Then, cut them into long, thin strips about 0.3-0.5 cm thick. Two medium potatoes should yield a good amount. Cutting them thinly helps them cook faster and achieve a better texture.
Step 2
Rinse the julienned potatoes under cold running water 2-3 times to remove excess starch. This prevents the potato strips from sticking together during stir-frying, resulting in a cleaner dish. After rinsing, drain them well in a colander.
Step 3
Slice the onion into strips similar in thickness to the potatoes. Trim the stems off the 5 Cheongyang peppers and finely chop them to add a spicy element. Feel free to add more if you enjoy a spicier flavor.
Step 4
Heat a good amount of cooking oil in a pan over medium heat. Add the drained potato strips and begin to stir-fry. Gently toss them with chopsticks or a spatula to prevent sticking.
Step 5
Once the potatoes start to turn translucent and are about halfway cooked, add the sliced onions to the pan and continue to stir-fry together. The onions will soften and add a natural sweetness to the dish.
Step 6
When the onions become vibrant in color, add 1/3 Tbsp of salt for seasoning. Adjust the salt level according to your personal taste. I prefer my potato noodles slightly crisp, so I cook them to that stage, but you can cook them longer if you prefer a softer texture.
Step 7
When the potatoes and onions reach your desired tenderness, add the chopped Cheongyang peppers and a pinch of black pepper for aroma. Sprinkle in some sesame seeds for a nutty flavor.
Step 8
Stir everything together evenly one last time to ensure all ingredients are well combined. Turn off the heat to finish. Plate the delicious stir-fried potato noodles and enjoy them with a warm bowl of rice!
