A Unique Jeyuk Bokkeum Recipe: Pork Shoulder Stir-fried with Tomato Sauce
Move over, ordinary Jeyuk Bokkeum! This recipe introduces a special stir-fried pork that combines the rich depth of tomato sauce with tender pork shoulder and fragrant mushrooms for a deeply satisfying flavor. It’s a guaranteed rice-stealer!
Main Ingredients- 400g Pork Shoulder, thinly sliced
- 100g Oyster Mushrooms
- 1/4 Onion
- 2 Korean Green Chilies (Cheongyang Pepper)
Cooking Instructions
Step 1
First, prepare the ingredients. Separate the 100g of oyster mushrooms into individual strands and wash them under running water, then drain well. Thinly slice the 1/4 onion into strips, about 0.5cm thick. Finely chop the 2 Korean green chilies. The mushrooms will add a subtle earthiness, and the onions will bring sweetness to the dish.
Step 2
Heat a pan over medium-high heat without any oil. Add the thinly sliced 400g pork shoulder and begin to stir-fry. Spreading the meat out in the pan helps to evaporate excess moisture and bring out its natural flavor. Once the pork is about 70% cooked and starting to turn golden brown, add 1 Tbsp of minced garlic and stir-fry together until fragrant, about 1 minute. Be careful not to burn the garlic.
Step 3
When the pork is fully cooked, add 1 Tbsp of sugar. Stir-fry the pork and sugar together until the sugar dissolves and coats the meat. This step caramelizes the sugar, adding a subtle sweetness and depth of flavor.
Step 4
Now, it’s time to add the chili flakes for a touch of heat and color. Add 1 Tbsp of gochugaru (Korean chili flakes) and quickly stir-fry over low heat to prevent burning. Ensure the chili flakes are evenly distributed over the pork, infusing it with their signature color and aroma without making it bitter.
Step 5
Add the prepared oyster mushrooms and sliced onions to the pan. Stir-fry for a couple of minutes until the mushrooms soften slightly and the onions become translucent. The mushrooms will release some moisture, and the onions will start to sweeten.
Step 6
Now for the star ingredient: the tomato sauce! Pour in 1 and 1/4 cups (approximately 250ml) of tomato sauce into the pan. Stir everything together well, ensuring the sauce coats all the ingredients evenly. The tangy and sweet notes of the tomato sauce will create a delicious fusion with the pork.
Step 7
Continue to stir-fry until the sauce thickens and clings to the pork. Finally, add the chopped Korean green chilies and stir-fry for another minute. The chilies will add a fresh burst of heat and a vibrant garnish. Taste the dish and adjust seasoning with a pinch of salt and pepper if needed. Serve hot over steamed rice for a delightful meal!
