Main Ingredients

  • 600g Pork Shoulder (sliced thinly for bulgogi is recommended)
  • 1/4 head Cabbage
  • 1 stalk Green Onion

Seasoning

  • 1 Tbsp Gochujang (Korean chili paste)
  • 50ml Store-bought Korean BBQ sauce (or 1 Tbsp soy sauce + 2 Tbsp corn syrup if unavailable)
  • 1 Tbsp Minced Garlic
  • Pinch of Black Pepper
  • 1.5 Tbsp Sugar
  • 2 Tbsp Mirin (or cooking wine)
  • 1 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Soy Sauce

Cooking Instructions

Step 1

In a bowl, combine the 600g of thinly sliced pork shoulder (bulgogi style). Add 50ml of store-bought Korean BBQ sauce, 1 Tbsp gochujang, 1 Tbsp minced garlic, a pinch of black pepper, 1.5 Tbsp sugar, and 2 Tbsp mirin (or cooking wine). Mix everything thoroughly with your hands until the pork is well coated with the marinade. Cover the bowl with plastic wrap and let it marinate in the refrigerator for 20 to 30 minutes. This resting time allows the flavors to meld beautifully.

Wash the 1/4 head of cabbage thoroughly. Slice it into pieces that are about 1cm thick. Avoid slicing it too thinly, as it can become mushy when stir-fried. A medium thickness will maintain a pleasant crispness.

Heat a pan over medium-high heat. Add the marinated pork shoulder to the pan and begin to stir-fry. Use chopsticks or a spatula to break up any clumps of meat and ensure even cooking. Continue stir-frying until the pork is about 70-80% cooked through and has changed color.

Once the pork is mostly cooked, add the sliced cabbage to the pan. Stir everything together well, allowing the cabbage to wilt slightly and mix with the pork and marinade. Continue to stir-fry for a few minutes until the cabbage is tender-crisp.

After adding the cabbage, sprinkle in 1 Tbsp gochugaru (Korean chili flakes) and 1 Tbsp soy sauce. Gently stir everything together for another 2 to 3 minutes, allowing the new seasonings to combine with the existing sauce and coat the ingredients. Taste the dish and add a little more soy sauce if you prefer it saltier.
