Main Ingredients & Marinating- Pork shoulder or belly 600-650g (pre-sliced for stir-frying is convenient)
- Salt, a pinch (adjust to your preference)
- Black pepper, a pinch (helps remove gamey odor and enhances flavor)
Spicy & Sweet Sauce- Gochujang (Korean chili paste) 3 Tbsp (the core seasoning for the flavor base)
- Sugar 1 Tbsp (adds sweetness to balance the spiciness. Can be substituted with honey or corn syrup!)
- Soy sauce 2 Tbsp (adds umami and deep flavor)
- Gochugaru (Korean chili flakes) 1 tsp (adjust the amount if you want more color and a sharper spiciness)
- Minced garlic 1 Tbsp (the magical ingredient for flavor! Using fresh minced garlic is even better)
Vegetables for Stir-Frying- 1 medium onion, sliced (adds sweetness and texture)
- Mushrooms (Shiitake, King Oyster, Oyster, etc., as you prefer. Adds chewy texture and flavor)

Cooking Instructions
Step 1
Prepare 600-650g of fresh pork. Using pork pre-sliced for stir-frying will be more convenient. To remove any gamey smell and enhance the flavor, sprinkle a pinch of salt and a pinch of black pepper evenly over the pork. Gently rub with your hands to help the seasoning penetrate the meat.
Step 2
The key to delicious Jeyuk Bokkeum is this sauce! If you have mirin or cooking wine, you can also add a little to the pork. In a bowl, combine 3 Tbsp Gochujang, 1 Tbsp sugar (adjust sweetness to your taste! Honey or corn syrup works too), 2 Tbsp soy sauce, 1 tsp Gochugaru, and 1 Tbsp minced garlic. Mix well until there are no lumps. If the sauce is too thick, you can add a tiny bit of mirin or water.
Step 3
In a bowl, combine the marinated pork, sliced onion (1 medium), and your choice of mushrooms. Pour all the prepared spicy and sweet sauce over them. Gently mix with your hands, ensuring the sauce evenly coats the pork and vegetables. Be careful not to break the meat. Letting it marinate for about 10 minutes will allow the flavors to meld deeper, resulting in even more delicious Jeyuk Bokkeum.
Step 4
Heat a pan and add the marinated pork and vegetables. Stir-fry over medium-high heat. Once the ingredients start releasing moisture, reduce the heat to medium and continue to cook for 15 to 20 minutes until the liquid has evaporated and the pork is golden brown. It’s important to stir occasionally to prevent burning. Once the pork is fully cooked and the sauce clings to the meat, your delicious Jeyuk Bokkeum is ready! Serve it over warm rice for a delightful meal. You can also enjoy it with perilla leaves or pickled radish wraps.
