  • Pork shoulder or belly 400g (cut into bite-sized pieces)
  • Green onions 1/2 cup (chopped)
  • Onion 1/2 (sliced)
  • Carrot a little (thinly sliced or half-moon shaped)
  • Chives 1/2 bunch (cut into 3-4cm lengths)

Spicy Marinade

  • Gochujang (Korean chili paste) 3 Tbsp
  • Gochugaru (Korean chili flakes) 2 Tbsp
  • Soy sauce 2 Tbsp
  • Maesilcheong (plum syrup) or Oligodang (corn syrup) 1 Tbsp (for sweetness and shine)
  • Minced garlic 1 Tbsp
  • Black pepper a pinch
  • Mirin or cooking sake 1 Tbsp (to remove gamey smell)

Cooking Instructions

In a large bowl, combine the prepared pork with all the marinade ingredients. Gently mix by hand, ensuring the sauce coats the pork evenly. Let it marinate for at least 30 minutes.
