Main Ingredients- 1 squid
- 10 large shrimp
- 1 serving jjolmyeon noodles
- 1/2 onion
- 1/3 carrot
- 1/4 head cabbage
- 1 handful sliced garlic
- 2 chili peppers
- 2 Tbsp cooking oil
Lee Hye-jung’s All-Purpose Spicy Sauce (Make Extra for Refrigeration)- 1 cup gochujang (Korean chili paste)
- 1 cup gochugaru (Korean chili flakes)
- 4 Tbsp soy sauce
- 1/2 cup plum extract (or corn syrup)
- 1 Tbsp salted fermented shrimp
- 1 Tbsp black pepper
- 1 onion (pureed)
- 1 cup gochujang (Korean chili paste)
- 1 cup gochugaru (Korean chili flakes)
- 4 Tbsp soy sauce
- 1/2 cup plum extract (or corn syrup)
- 1 Tbsp salted fermented shrimp
- 1 Tbsp black pepper
- 1 onion (pureed)
Cooking Instructions
Step 1
Heat 2 tablespoons of cooking oil in a wide pan over low heat. Add the sliced garlic and 2 chili peppers, and gently stir-fry until fragrant. Be careful not to burn the garlic; stir-fry until it turns golden brown for enhanced flavor.
Step 2
Thinly slice 1/2 onion, julienne 1/3 carrot into wide strips, and cut 1/4 head of cabbage into large, bite-sized squares. Prepare all the vegetables.
Step 3
Add the prepared vegetables (onion, carrot, cabbage) to the fragrant garlic oil and stir-fry quickly over high heat until they are slightly tender but still crisp. Just until they soften slightly is perfect.
Step 4
Add 1 squid, scored and cut into bite-sized pieces, and 10 peeled and deveined large shrimp to the pan. Stir-fry briefly. Be mindful not to overcook the seafood, as it can become tough.
Step 5
Now, let’s make Lee Hye-jung’s All-Purpose Spicy Sauce! In a bowl, combine 1 cup gochujang, 1 cup gochugaru, 4 Tbsp soy sauce, 1/2 cup plum extract (or corn syrup), 1 Tbsp salted fermented shrimp, 1 Tbsp black pepper, and 1 pureed onion. Mix everything thoroughly. This sauce tastes even better when aged in the refrigerator for about a week! (Quantities for sauce are for future use.)
Step 6
Add a suitable amount of the pre-made spicy sauce to the pan with the stir-fried ingredients. Stir in 1 tablespoon of minced garlic and mix well. (Adjust the amount of sauce to your preference.)
Step 7
Turn the heat to high and stir-fry everything rapidly until the sauce coats all the ingredients evenly. If the sauce seems too thick, add a little water while stir-frying to achieve the desired consistency. Adding a touch of wok hei (breath of the wok) will enhance the flavor.
Step 8
Add the pre-cooked jjolmyeon noodles to the pan and toss them with the seafood, vegetables, and sauce until well combined.
Step 9
To prevent the jjolmyeon from becoming soggy, turn off the heat and quickly mix the noodles with the other ingredients. The key is to gently toss them using the residual heat so the sauce lightly coats the noodles.
Step 10
Finally, sprinkle with finely chopped green onions and give it one last quick toss. This adds a fresh aroma and vibrant color.
