This recipe features thinly sliced raw duck, stir-fried with a generous amount of spicy Cheongyang peppers to counteract any gamey odor. It’s seasoned lightly, allowing the duck’s natural flavor to shine. Enjoy it wrapped in fresh greens with a flavorful ssamjang (Korean dipping sauce) for a delightful meal.
Main Ingredients- 400g Sliced Raw Duck Meat
- 6 Cheongyang Peppers
- 3 Tbsp Minced Green Onion
Seasoning- 2 Tbsp Mirin (or cooking wine)
- Pinch of Black Pepper

Cooking Instructions
Step 1
Begin by preparing the thinly sliced raw duck meat. Gently pat it with paper towels to absorb any excess moisture for a better texture.
Step 2
Finely mince the Cheongyang peppers after removing their stems and seeds. Also, finely chop the green onion.
Step 3
In a bowl, combine the sliced raw duck with the minced Cheongyang peppers and green onion. Add the mirin and a pinch of black pepper. Gently mix everything together with your hands, ensuring the duck is evenly coated. The mirin helps to tenderize the duck and reduce any unwanted odors.
Step 4
Heat a lightly oiled pan over medium heat. Add the marinated duck and stir-fry until it’s cooked through and lightly browned. Be careful not to burn it. The duck will release some of its own fat, which will help cook the vegetables.
Step 5
Serve the cooked duck with fresh lettuce leaves and your favorite ssamjang (Korean dipping sauce) for wrapping. If desired, you can add a little salt to taste at the end.
