Ingredients
  • 1 serving Ramen noodles
  • Squid, appropriate amount
  • 2 Korean red chili peppers
  • Scallions, appropriate amount
  • 3 cloves garlic

Seasoning
  • Store-bought Vongole sauce, 1 ladleful (approx. 50-70ml)
  • Oyster sauce, 1/2 Tbsp
  • Canola oil

Cooking Instructions

Step 1

First, prepare your ingredients. Thinly slice the garlic cloves. Finely chop the scallions and Korean red chili peppers. Cut the squid into bite-sized pieces, about 1-2 cm wide.

Step 2

Boil the ramen noodles in water. Cook them for about 1 minute less than the package instructions, so they remain ‘al dente’ (slightly firm). It’s important not to overcook them.

Step 3

Drain the cooked noodles and rinse them briefly under cold water to cool them down. Drain thoroughly to remove excess water. This helps prevent the noodles from becoming mushy and keeps them delightfully chewy.

Step 4

Heat a generous amount of canola oil in a large pan over medium-low heat. Add the sliced garlic and sauté until fragrant and lightly golden. Once the garlic is aromatic, increase the heat to high, add the chopped scallions and squid, and stir-fry quickly. Cook until the squid turns opaque (white).

Step 5

Add the drained ramen noodles to the pan. Pour in 1 ladleful of the store-bought Vongole sauce and toss well with the noodles to ensure they are evenly coated.

Step 6

Add the chopped Korean red chili peppers for a touch of spiciness. Then, add 1/2 Tbsp of oyster sauce and stir-fry quickly to combine and season everything. The oyster sauce will add a wonderful umami depth.

Step 7

Give everything a final quick stir-fry (‘hwi-ri-rik!’) until all ingredients are well combined with the sauce. Your delicious Squid Vongole Ramen is now ready to be enjoyed! Serve immediately while hot. You can optionally garnish with a sprinkle of parsley flakes or black pepper.
