Ingredients

  • 5 cloves garlic (thinly sliced)
  • 1/2 onion (sliced)
  • 1.5 squids (cleaned and cut into bite-sized pieces)
  • 15 cherry tomatoes (halved)
  • 1 jar (430g) store-bought tomato sauce
  • 2 Korean chili peppers (finely chopped)
  • 1 Tbsp olive oil
  • 4 servings fresh pasta noodles

Cooking Instructions

Step 1

Since we’re using fresh pasta, we’ll start by sautéing the vegetables to prepare the sauce. Heat olive oil in a pan over medium heat and add the sliced garlic. Sauté until fragrant. (Using olive oil infused with basil will enhance the flavor.)

Once the garlic releases its aroma, add the sliced onion and sauté until translucent. Cook over low heat and lightly season with salt. This step helps to bring out the natural sweetness of the onion.

Add the cleaned and cut squid to the pan and stir-fry quickly. Squid can become tough if overcooked, so sauté it just until it changes color.

Pour in the store-bought tomato sauce and add the halved cherry tomatoes to the pan with the squid and vegetables. Simmer for a short while to allow the sauce to meld with the other ingredients.

Bring a pot of generously salted water to a rolling boil. Add the fresh pasta noodles and cook for about 30 seconds less than the time indicated on the package. (Fresh pasta cooks very quickly, so be mindful!)

Drain the cooked pasta and immediately add it to the simmering tomato sauce. Toss gently with tongs or a fork to coat the noodles evenly with the sauce. (Adding a ladleful of pasta water can help create a smoother sauce.)
