A Delicious Home-Cooked Meal: Recipe for Spicy Squid Stir-fry with Broth and Noodles
As the weather turns colder, nothing beats a warm and spicy dish! Today, we’re making a flavorful squid stir-fry with a generous broth, perfect for slurping up with noodles. It’s a dish that warms you up from the inside out!
Main Ingredients- 2 squid (cleaned)
- 1 onion (medium size)
- 1/2 stalk green onion
- Somen noodles (to your preference)
Spicy Sauce- 3 Tbsp gochujang (Korean chili paste)
- 2 Tbsp gochugaru (Korean chili powder)
- 2 Tbsp soy sauce
- 2-3 Tbsp sugar (adjust to taste, stevia can be substituted)
- 1 Tbsp minced garlic
- 1 Tbsp cooking wine (mirin)
- A pinch of black pepper
- 1 cup water (approx. 180ml)
- 3 Tbsp gochujang (Korean chili paste)

- 2 Tbsp soy sauce
- 2-3 Tbsp sugar (adjust to taste, stevia can be substituted)

Cooking Instructions
Step 1
First, let’s prepare the delicious spicy sauce for the squid stir-fry. In a bowl, combine 3 Tbsp gochujang, 2 Tbsp gochugaru, 2 Tbsp soy sauce, 1 Tbsp cooking wine, 2-3 Tbsp sugar, 1 Tbsp minced garlic, and a pinch of black pepper. Mix them well. If you prefer a less intense sweetness, you can use stevia instead of sugar for a cleaner taste.

Next, prepare the vegetables. Peel and thinly slice the onion into about 0.5cm thick strips. Cut the white parts of the green onion into 4-5cm lengths or slice them diagonally.

Prepare the cleaned squid. If you bought pre-cleaned squid from the market, rinse it lightly under running water. Then, use coarse salt to scrub the suckers and surface to ensure it’s thoroughly clean. Cut the squid into bite-sized pieces, about 2-3cm wide.

Heat a pan with a generous amount of cooking oil. Add the sliced onions and green onions. Stir-fry over medium-high heat for about 1 minute until fragrant. Sautéing the vegetables first will enhance their sweetness and flavor.

Add the bite-sized squid and the prepared spicy sauce to the pan with the fragrant vegetables. Stir-fry quickly over medium-high heat, ensuring all ingredients are well coated with the sauce. Be careful not to overcook the squid, as it can become tough.

Once the sauce is well incorporated, pour in 1 cup (approx. 180ml) of water. This water will create a delicious broth for your squid stir-fry. Let it simmer until the sauce thickens slightly.

If you prefer it spicier, add 2 chopped green chilies. This will add an extra kick and make your squid stir-fry even more delightful.

Finally, add the remaining chopped green onions to the pan and cook for just another 30 seconds before turning off the heat. Keeping the green onions slightly crisp adds a wonderful texture to the dish.

For a finishing touch, drizzle in 1 Tbsp of sesame oil and sprinkle with toasted sesame seeds. Feel free to adjust the amount of sesame oil and seeds to your liking. Your visually appealing and delicious squid stir-fry is ready!

Now, let’s cook the somen noodles to enjoy with the squid stir-fry. Bring a large pot of water to a rolling boil. Add the somen noodles and cook for about 3 minutes. (Typically, one serving is about the size of a US quarter.) If the water starts to boil over, add about half a cup of cold water. Repeat this process of adding cold water whenever the water boils up, for a total of 3 times. This method helps the noodles cook perfectly and become chewy.
Step 11
Immediately after cooking, rinse the somen noodles in cold water and rub them gently. This removes excess starch, making them chewier and preventing them from sticking or becoming mushy. Drain thoroughly. To enhance the flavor and prevent sticking, you can mix in 1 Tbsp of sesame oil and 0.5 Tbsp of soy sauce beforehand. This ensures your noodles are delicious and stay perfectly textured, even if left for a while.
