Stew Ingredients

  • 1 medium onion
  • 200g ground pork
  • 500ml water
  • 2 packs silken tofu
  • 1 handful oyster mushrooms (approx. 50g)
  • 2 fresh eggs
  • 1 spicy Cheongyang chili pepper

Golden Seasoning

  • 5 Tbsp cooking oil
  • 4 Tbsp gochugaru (Korean chili flakes)
  • 1/2 Tbsp salt
  • 1/2 tsp sugar
  • 1 Tbsp oyster sauce
  • 5 Tbsp soup soy sauce (guk-ganjang)

Cooking Instructions

Step 1

First, wash and peel the onion. Dice it into small, approximately 0.5cm cubes. This will help it cook quickly and enhance the broth’s flavor.

Step 1

Step 2

Prepare a deep pot and add 5 tablespoons of cooking oil. Heat over medium heat, then add the diced onion. Sauté for about 3-4 minutes until the onion becomes translucent and releases its sweet aroma. This step caramelizes the onion, deepening the stew’s flavor.

Step 2

Step 3

Once the onions are well sautéed, add the 200g of ground pork to the pot.

Step 3

Step 4

Ground pork tends to clump together, so use a spatula or spoon to break it apart as it cooks. Stir-fry until the pork is no longer pink and is nicely browned, being careful not to burn it.

Step 4

Step 5

When the ground pork is sufficiently cooked, add 4 tablespoons of gochugaru (Korean chili flakes). This will provide spiciness and a vibrant red color. Add 1/2 tablespoon of salt at this stage for initial seasoning.

Step 5

Step 6

Add 1/2 teaspoon of sugar for a touch of sweetness and 1 tablespoon of oyster sauce for umami. Oyster sauce is a magical ingredient that adds deep flavor to the stew.

Step 6

Step 7

Now, stir well to combine the gochugaru, salt, sugar, and oyster sauce with the pork. Stir-fry for another 1-2 minutes. The chili flakes will release their oil, forming the base of the stew broth.

Step 7

Step 8

Once the ground pork and seasonings are well sautéed, pour in 500ml of water. Increase the heat to high and bring the stew to a rolling boil.

Step 8

Step 9

When the stew is vigorously boiling, carefully add the 2 packs of silken tofu. Break the tofu into large chunks with a spoon as you add it. Avoid stirring too much to maintain the tofu’s soft texture.

Step 9

Step 10

Once the tofu has simmered for a bit, crack the 2 fresh eggs into the stew. The eggs will cook, making the broth smoother and richer. It’s best not to stir immediately after adding the eggs.

Step 10

Step 11

Gently rinse the oyster mushrooms under running water, then tear them into bite-sized pieces with your hands before adding them to the stew. Mushrooms add a refreshing depth and delightful texture.

Step 11

Step 12

If you desire more heat, finely chop 1 Cheongyang chili pepper and add it to the stew. Adjust the amount according to your preference; feel free to add two if you love it extra spicy!

Step 12

Step 13

Finally, taste the stew and adjust the seasoning with 5 tablespoons of soup soy sauce (guk-ganjang). This soy sauce adds a deep, savory flavor. You can also add more salt if needed.

Step 13

Step 14

Once all ingredients are well combined and the stew is bubbling merrily, ladle it generously over hot rice and enjoy! Your delicious and spicy ground pork soft tofu stew is complete. Bon appétit!
