This soft tofu yeol ramen recipe is a go-to when I don’t feel like preparing a full meal alone, or when I’m craving a satisfying bowl of noodles. It’s a perfect way to elevate instant ramen into a comforting and flavorful dish.

Ingredients

  • 1 packet Yeol Ramen (including noodles, powder soup, and dried vegetable mix)
  • 1/2 block soft tofu (approx. 200g)
  • 65g bean sprouts
  • 20g green onion
  • 550ml water
  • Pinch of black pepper (to taste)

Cooking Instructions

First, prepare one packet of Yeol Ramen. Take out the noodles, powder soup, and dried vegetable mix from the packet, getting everything ready for cooking.

Cut the soft tofu into approximately 1 to 1.5 cm thick pieces, making them easy to eat. Finely chop the green onion to add a fresh aroma.

In a bowl, add enough water to cover the bean sprouts. Gently swirl them with your hands to wash them about twice. Drain the washed bean sprouts in a colander.

Pour 550ml of water into a pot. (Tip: If you’re not adding bean sprouts, you can follow the water amount indicated on the ramen package.)

Add both the powder soup and the dried vegetable mix from the Yeol Ramen packet into the pot. Place it over high heat on the stove and bring to a boil.

Once the water is boiling vigorously, add the Yeol Ramen noodles. Use chopsticks to gently separate the noodles so they don’t stick together. Set a timer for 3 minutes and 30 seconds. (Personal tip: I slightly reduced the cooking time for the photo, but generally, it’s best to cook according to the recommended time on the back of the ramen package.)

After loosening the noodles, add the cleaned and drained bean sprouts and gently stir them into the broth.

With about 30 seconds left on the timer, add the sliced soft tofu and green onions to the pot and stir gently. Once the broth starts boiling again, turn off the heat. (Soft tofu tip: You can add all the soft tofu if you prefer, or add half and then place the other half on top of the ramen when serving.)
