Main Ingredients

  • 300g Pork shoulder or belly (for a rich broth)
  • 150g Well-fermented napa cabbage kimchi (the more sour, the tastier!)
  • 1/2 block Soft tofu (approx. 150-200g)
  • 1/2 medium Onion
  • 400ml Rice water (or plain water)

Seasoning

  • 1 tsp Gochugaru (Korean chili flakes, adjust to taste)
  • 1 Tbsp Guk-ganjang (Korean soy sauce for soup, adds umami)
  • 1 Tbsp Fish sauce (anchovy or sand lance, for a refreshing umami boost! You can also use ‘Yeondu’ seasoning sauce if available)
  • 1 tsp Minced garlic

Cooking Instructions

Step 1

In a pot, combine the rice water (400ml) and the pork (300g), cut into bite-sized pieces. Bring to a boil over high heat. Cover and simmer for about 10 minutes to allow the pork to release its flavorful juices. Using rice water will make the broth much more savory and smooth.

Once the pork is somewhat cooked, add the finely chopped kimchi (150g) and bring it back to a rolling boil over high heat. Continue to boil for another 5 minutes, allowing the kimchi to soften and infuse its deep flavor into the broth.

When the kimchi is well-cooked, add the sliced onion (1/2), minced garlic (1 tsp), gochugaru (1 tsp), guk-ganjang (1 Tbsp), and fish sauce (1 Tbsp). Stir everything well to combine. Let it simmer further for a few minutes so all the seasonings meld into the broth.

Finally, carefully scoop the soft tofu (1/2 block) into the pot in large chunks using a spoon. Gently stir to avoid breaking the tofu too much. Simmer for another 3-5 minutes until the tofu is heated through. This will result in a wonderfully smooth and flavorful Soft Tofu Kimchi Stew.
