Ingredients

  • 1 bowl of well-fermented kimchi (including juice)
  • 1 can of tuna (drained)
  • 1 Tbsp perilla oil
  • 1 Tbsp red pepper flakes
  • 2 cups water
  • 2 Tbsp tuna extract (or soy sauce for soup)
  • 1/2 tsp salt (adjust to taste)
  • A pinch of MSG or soup enhancer (optional)
  • A small amount of green onion (chopped)

Cooking Instructions

Step 1

First, prepare a pot or a Korean earthenware pot (ttukbaegi). Place a generous amount of well-fermented kimchi into the bottom of the pot. Add about 1 tablespoon of the oil from the canned tuna. (If you don’t have tuna oil, you can use a little more perilla oil.) Next, sprinkle 1 tablespoon of red pepper flakes evenly over the kimchi.

Now, add 1 tablespoon of perilla oil. Combine the kimchi, red pepper flakes, tuna oil, and perilla oil. Stir-fry over medium-low heat for about 2-3 minutes. This stir-frying process helps to draw out the deep flavors of the kimchi and adds delicious umami.

Once the kimchi has softened somewhat from stir-frying, pour in 2 cups (400ml) of water. Stir well to dissolve the flavorful seasoning stuck to the bottom of the pot into the water.

When the water comes to a boil, add 2 tablespoons of tuna extract (or soup soy sauce). Using tuna extract will further enhance the natural savory flavor of the tuna. Let it simmer over medium heat for about 5 minutes to allow the broth to develop a rich flavor.

Now it’s time to season the broth. Start by adding 1/2 teaspoon of salt and taste. If it’s still not seasoned enough, add more salt little by little. If you want to add more depth of flavor, a very small amount of MSG or soup enhancer can make the broth taste much richer. (Caution: Be careful not to add too much enhancer, as it can make the stew overly salty. Always add it gradually while tasting.)

Drain most of the oil from the canned tuna and add the tuna chunks to the boiling kimchi stew. Continue to simmer for about 5 more minutes after adding the tuna. As the tuna cooks through, it will blend beautifully with the broth, making it even more delicious.
