A Deliciously Spicy and Zesty Squid Stir-Fry Perfect for Enjoying with Rice!
I love squid, so I always keep frozen, pre-cleaned squid on hand for easy cooking! Today, I’ll show you how to make a spicy and zesty squid stir-fry that’s the perfect ‘rice thief.’ It’s so good, you’ll find yourself reaching for more rice with every bite!
Main Ingredients- 1 Frozen, cleaned squid (approx. 200-250g)
- 1/2 Onion, sliced
- 1/4 Carrot, thinly sliced
- 1/4 Green onion, diagonally sliced
- 1 Green chili pepper, seeded and diagonally sliced (adjust to your spice preference)
- 1 Red chili pepper, seeded and diagonally sliced (for garnish)
Sauce Ingredients- 1.5 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes, adjust for spice)
- 1 Tbsp Sugar (adjust for sweetness)
- 1.5 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 1/2 Tbsp Minced ginger (optional, to remove gaminess)
- Pinch of Black pepper
- Pinch of Sesame seeds (for garnish)
- 2 Tbsp Sesame oil
- 1.5 Tbsp Gochujang (Korean chili paste)
- 1/2 Tbsp Gochugaru (Korean chili flakes, adjust for spice)
- 1 Tbsp Sugar (adjust for sweetness)
- 1.5 Tbsp Soy sauce
- 1 Tbsp Minced garlic
- 1/2 Tbsp Minced ginger (optional, to remove gaminess)
- Pinch of Black pepper
- Pinch of Sesame seeds (for garnish)
- 2 Tbsp Sesame oil
Cooking Instructions
Step 1
Rinse the frozen squid under cold water to thaw. Gently peel off the outer skin. Make diagonal score marks on the inside of the squid body; this helps the sauce penetrate better and improves the texture.
Step 2
Cut the squid body into 5cm pieces. Slice the tentacles into bite-sized pieces as well. (Cutting them to a similar length as the body pieces makes stir-frying easier.)
Step 3
Slice the onion about 0.5cm thick. Slice the carrot thinly, about 0.3cm thick. Diagonally slice the green onion and chili peppers. (Ensuring all vegetables are cut to a similar size as the squid will help them cook evenly.)
Step 4
In a small bowl, combine the gochujang, gochugaru, sugar, soy sauce, minced garlic, minced ginger, and black pepper. Mix thoroughly with a spoon to create a delicious sauce. (Taste the sauce and adjust the sugar or soy sauce to your preference.)
Step 5
Heat a lightly oiled pan over medium-low heat. Add the sliced onions first and sauté until they become translucent. The sweetness from the onions will enhance the overall flavor of the squid stir-fry.
Step 6
Once the onions start to turn translucent, add the thinly sliced carrots and stir-fry them together. When the carrots are slightly tender, add the prepared squid and turn the heat up to high.
Step 7
As the squid turns opaque, add all of the pre-made sauce to the pan. Stir quickly to coat the squid and vegetables evenly with the sauce. (Be careful not to burn the sauce.)
Step 8
Increase the heat to high and stir-fry rapidly for about 2-3 minutes, or until the squid is fully cooked. Once the squid is done, add the sliced red chili, green chili, and green onion. Drizzle with 1 tablespoon of sesame oil for a glossy finish, then turn off the heat. (Avoid overcooking, as this can make the squid tough.)
Step 9
Transfer the finished squid stir-fry to a serving dish. Sprinkle with sesame seeds for garnish. Serve over hot rice for a delightful meal or enjoy it with lettuce wraps. This quick and delicious squid stir-fry is sure to be a hit! Enjoy your meal!
