This is a super simple stir-fried octopus with bean sprouts recipe, made by quickly preparing the sauce and stir-frying frozen, pre-cut octopus. No marinating required, making it perfect for busy days! The fiery, spicy flavor is exquisite, and the crunchy bean sprouts add a delightful texture. The combination of chewy octopus and crisp bean sprouts is sure to blow away your stress. You can also add wide glass noodles or pasta to make it like a rosé pasta for a more diverse flavor experience. It balances the spiciness while bringing out a rich umami taste.

- 300g Blanched bean sprouts

Step 1
For a super quick stir-fry, we’ll skip marinating the octopus. Heat a wide pan and combine all the sauce ingredients (gochugaru, soy sauce, beef broth powder, soju, mirin, plum extract, sugar, minced garlic, grated ginger, black pepper) along with the starch and green tea water (or plain water). Stir well over medium-low heat and bring to a simmer. The starch will create a thick, rich sauce base. It might seem thick at first, but as you add the octopus and bean sprouts, natural moisture will be released.
Step 2
Once the sauce is simmering, add the frozen, pre-cut octopus directly to the pan. Turn the heat to medium and stir-fry, gently mixing with a spatula to coat the octopus evenly with the sauce. As the octopus cooks, it will release its juices, creating a natural sauce. Once the octopus is fully cooked, the basic stir-fry is complete. While you can enjoy it as is, we’re adding crunchy bean sprouts to make it even better.
Step 3
After checking that the octopus is cooked through, add the blanched bean sprouts and chopped green onions (if using) to the pan. Reduce the heat to medium-low and gently mix everything together for about 1-2 minutes, ensuring all ingredients are well coated with the sauce.

During this brief stir-fry, the bean sprouts will wilt slightly while retaining their crispness. Blanching the bean sprouts beforehand ensures a clean taste without any raw flavor. If you prefer a crunchier texture, you could try adding raw bean sprouts directly and stir-frying, but be mindful of any potential raw bean sprout flavor.
