Main Ingredients

  • 1 pack Fresh Chicken Gizzards (approx. 300-400g)
  • Store-bought Mala Sauce (adjust quantity to your preference)
  • 1 medium Onion
  • 5 cloves Garlic
  • 10cm piece Scallion (Green Onion)
  • 2 Korean Green Chilies (adjust based on spice preference)
  • Cooking oil (as needed)

Gizzard Preparation & Deodorizing

  • 2 Tbsp Soju (for deodorizing)
  • 1/2 Tbsp Coarse Salt (for cleaning and initial seasoning)
  • 2-3 Tbsp All-purpose Flour
  • Cold Water (for rinsing)

Cooking Instructions

Step 1

First, carefully trim away any excess fat or membranes from the chicken gizzards. Rinse them under running water. In a bowl, combine the gizzards with 2-3 tablespoons of flour and 1/2 tablespoon of coarse salt. Gently knead and massage the mixture for about a minute; the flour and salt will help absorb any impurities and odors. After this, rinse the gizzards thoroughly with cold water 2-3 times to remove all traces of flour and salt. Drain them well.

Bring a pot of water to a rolling boil over high heat. Once boiling, add 1/2 tablespoon of coarse salt to the water. The salt helps to season the gizzards as they cook and contributes to a tender texture.

Add the prepared chicken gizzards to the boiling water. Cook them until they are no longer pink inside, which typically takes about 5-7 minutes. Be careful not to overcook them, as they can become tough. Check for doneness periodically.
