I tried making the Gamja Jjageuli recipe that Yang Se-hyung introduced on Baek Jong-won’s ‘Sikryeobi-chaek’ (Cooking Secrets). It looked so easy and turned out incredibly delicious – spicy, savory, and a perfect match for rice. You’ll find yourself wanting more!
Main Ingredients- 3 Potatoes
- 1 Onion
- 1 can Spam (small size)
- 3 Korean Green Chilies (Cheongyang Pepper)
- 1 Green Onion
Cooking Instructions
Step 1
First, prepare all the ingredients thoroughly. For the Spam, a small can (about 200g) works well for this recipe.
Step 2
Wash the potatoes and onion, peel them, and dice them into roughly 1 cm cubes. Cutting them into bite-sized pieces ensures even cooking. Avoid making them too large, as they will take longer to cook.
Step 3
Finely chop the Korean green chilies after washing and removing the stems. These will add a pleasant spicy kick.
Step 4
Finely chop the green onion. Its aroma will enhance the overall flavor of the dish.
Step 5
Open the Spam can, drain any liquid, and place the Spam into a plastic bag. Then, use a rolling pin or your hands to firmly mash the Spam. Mashing it helps the sauce penetrate better and adds a richer texture.
Step 6
In your cooking pot, start by layering the diced potatoes at the bottom. Then, add the diced onion, mashed Spam, chopped green chilies, and chopped green onion on top.

Add all the seasoning ingredients: sugar, gochugaru, cooking wine, soy sauce, doenjang, minced garlic, and gochujang. Pour in 500ml of water. If you don’t have a measuring cup, add enough water so that the ingredients are about halfway submerged.

Stir everything gently with a spatula to combine the ingredients and seasonings. Cover the pot with a lid and cook over medium heat until the sauce has reduced and the potatoes are tender enough to be easily mashed. This usually takes about 22 minutes. Be sure to stir occasionally to prevent sticking to the bottom.

Your delicious Gamja Jjageuli is now ready!
