Toast Ingredients

  • 2 fresh eggs
  • 4 slices of ham
  • 1 slice of cheddar cheese
  • 1 tablespoon butter (approx. 15g)
  • 2 slices of soft bread
  • Sugar, to taste

Spicy Cheongyang Mayo Sauce

  • 2 tablespoons mayonnaise (approx. 30g)
  • 0.5 tablespoon soy sauce (approx. 7.5ml)
  • 1 fresh Cheongyang chili pepper, finely minced

Cooking Instructions

Step 1

Prepare the rich egg mixture that will fill your toast. Feel free to add other ingredients from your refrigerator, such as corn kernels, enoki mushrooms, or imitation crab meat, to make it even more special. (Tip: For reference, the ‘Haetou’ broadcast featured corn, enoki mushrooms, and imitation crab meat in their version.)

Step 1

Step 2

In a small bowl, combine 2 tablespoons of mayonnaise and 0.5 tablespoon of soy sauce. Add 1 finely minced Cheongyang chili pepper and stir everything together until well combined to create the delicious Cheongyang Mayo sauce. (Tip: Adjust the amount of Cheongyang chili pepper according to your preferred spice level.)

Step 2

Step 3

Add 2 fresh eggs, 1 slice of cheddar cheese, and 4 slices of ham to a bowl. Use kitchen scissors to cut them into small, bite-sized pieces. Mix all the ingredients thoroughly so they are well combined with the eggs.

Step 3

Step 4

Melt 1 tablespoon of butter in a heated pan. The butter will add a wonderful flavor as it melts.

Step 4

Step 5

Place the 2 slices of bread into the pan with the melted butter and toast them until golden brown and crispy on both sides. Transfer the toasted bread slices to a separate plate. (Tip: If you stand the toasted bread slices upright, leaning against each other, they will stay crispier. Alternatively, you can place them on a wire rack.)

Step 5

Step 6

Lightly wipe the pan used for toasting the bread with a paper towel. Add a little cooking oil and pour in all the prepared egg mixture. Spread it thinly to cover the pan.

Step 6

Step 7

Using a spatula or turner, shape the egg mixture to be roughly the size of the bread. Cook over medium-low heat until golden brown on both sides, being careful to cook it evenly.

Step 7

Step 8

Spread the prepared Cheongyang Mayo sauce evenly over one side of the toasted bread using a spoon or a brush. The sauce will soak into the bread, enhancing its flavor.

Step 8

Step 9

Carefully place the golden-brown egg patty onto the bread with the Cheongyang Mayo sauce. If the egg patty is larger than the bread, trim any excess edges with scissors and place them on top of the patty for a fuller look. (Tip: Sprinkle a little sugar if you prefer a touch of sweetness.)

Step 9

Step 10

Cover the egg patty with the remaining slice of bread. For extra flavor, you can spread a little Cheongyang Mayo sauce on the inside of this slice as well.

Step 11

Your delicious Spicy & Savory Cheongyang Mayo Egg Toast is complete! Enjoy your meal.
