Quick & Spicy Sausage Japchae Using Pre-Soaked Glass Noodles
When you’re short on time or need a quick side dish, utilizing pre-soaked glass noodles from the fridge is a lifesaver. This recipe features chewy glass noodles combined with savory sausages and the zesty kick of chili peppers, creating a delightful dish that’s perfect as a main side for any meal or even as a savory snack with drinks. Introducing a simple yet incredibly flavorful spicy sausage japchae.
Main Ingredients
- Pre-soaked glass noodles 550g
- Carrot 1/4
- Onion 1
- Red chili pepper 1
- Green chili pepper 2
- Frankfurter sausages 2
- Cooking oil, as needed
- Fine salt, to taste
Seasoning Ingredients
- Water 3 cups
- Soy sauce 3 Tbsp
- Oyster sauce 2 Tbsp
- Cooking wine (Mirin or Cheongju) 2 Tbsp
- Sugar 1 Tbsp
- Perilla oil 3 Tbsp
- Toasted sesame seeds or ground sesame seeds 2 Tbsp
- Water 3 cups
- Soy sauce 3 Tbsp
- Oyster sauce 2 Tbsp
- Cooking wine (Mirin or Cheongju) 2 Tbsp
- Sugar 1 Tbsp
- Perilla oil 3 Tbsp
- Toasted sesame seeds or ground sesame seeds 2 Tbsp
Cooking Instructions
Step 1
First, prepare the vegetables. Thinly julienne the onion and carrot. Remove the seeds from the red and green chili peppers and slice them to add a spicy aroma.
Step 2
Cut the frankfurter sausages in half lengthwise, then slice them into strips. This shape allows them to absorb the sauce better, making them even more delicious.
Step 3
Heat a generous amount of cooking oil in a pan over medium-high heat. Add the julienned onion and two pinches of fine salt. Sauté until the onion becomes translucent. Transfer the sautéed onion to a separate bowl and let it cool slightly.
Step 4
In the same pan, add the carrots and a pinch of fine salt. Stir-fry for about 1-2 minutes, ensuring the carrots retain a slight crunch. Be careful not to overcook them, as they can become mushy.
Step 5
Now, add the sliced sausages, red chili pepper, and green chili pepper to the pan. Stir-fry together for 1-2 minutes until the ingredients are well combined and fragrant.
Step 6
Transfer all the sautéed vegetables and sausages to a large plate or bowl. Spread them out to cool. This step prevents the ingredients from sticking together when mixed with the noodles later.
Step 7
In a wide pan or pot, combine 3 cups of water, 3 Tbsp soy sauce, 2 Tbsp oyster sauce, 2 Tbsp cooking wine, and 1 Tbsp sugar. Whisk together to create the sauce. Once the sauce comes to a boil, add the pre-soaked glass noodles. Cook until the noodles absorb the sauce and become tender.
Step 8
Continue to cook over medium heat, stirring occasionally, until the sauce has almost completely evaporated and the noodles are well-coated. It’s important to stir to prevent the noodles from sticking to the bottom of the pan.
Step 9
Finally, turn off the heat. Stir in 3 Tbsp of perilla oil and 2 Tbsp of sesame seeds. Add the pre-sautéed and cooled vegetables and sausages. Gently toss everything together until well combined. Your delicious spicy sausage japchae is ready to be enjoyed hot!
