After a few days of eating only meat, I felt like having a hearty stew like my mom used to make, so I decided to cook this up. This Saury Kimchi Stew, made conveniently with canned saury, offers a profound umami flavor that makes you crave two bowls of rice – it’s a true ‘rice thief’! The tanginess of aged kimchi combined with the tender saury creates a perfect stew, ideal for a hangover cure or a satisfying meal. Enjoy a simple yet authentic stew taste!
Ingredients- 1/2 onion, thinly sliced
- 1/2 green onion, diagonally sliced
- 1 can (15 oz) canned saury for stew
- 1.5 cups water (approx. 300ml)
- Well-fermented kimchi, to your liking, cut into bite-sized pieces
Cooking Instructions
Step 1
First, peel the onion and slice it thinly into about 0.5cm strips. Wash the green onion and slice it diagonally at roughly 0.5cm intervals. Prepare these vegetables.
Step 2
Using well-fermented, tangy kimchi will deepen the stew’s flavor. Cut the kimchi into bite-sized pieces that are easy to eat. If your kimchi is too sour, a tiny pinch of sugar can help balance the taste.
Step 3
In a pot, combine the sliced onion, green onion, kimchi, and the entire can of saury (including the liquid). Add 1.5 cups (about 300ml) of water. Bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for 15 to 20 minutes, allowing the flavors to meld beautifully. Skim off any foam that rises to the surface for a cleaner broth.
