Main Ingredients- 1.5 cups well-fermented kimchi (about 1 large bowl)
- 1.5 handfuls fresh bean sprouts (approx. 150g)
- 1/3 block firm tofu
- 1/2 Tbsp minced garlic
- 2 Tbsp anchovy sauce (or fish sauce)
- 1.3 liters water
- 2 soup stock cubes (or anchovy-kelp broth)
Cooking Instructions
Step 1
First, let’s prepare the main ingredients: kimchi and bean sprouts. Chop the kimchi into bite-sized pieces, about 1.5 large bowls worth. Rinse the bean sprouts and prepare about 1.5 handfuls. Also, have 1/3 block of firm tofu ready for a softer texture. Measure out the minced garlic and anchovy sauce for the seasoning.
Step 2
The secret to a deep and refreshing broth! Let’s make the broth. Pour 1.3 liters of water into a pot and add 2 soup stock cubes. (If you don’t have stock cubes, you can use dried anchovies and kelp to make your own broth.)

Once the broth comes to a rolling boil, add the prepared kimchi to the pot. It’s important to let the kimchi simmer and release its flavor into the broth until it becomes tender.

When the kimchi has softened and flavored the broth, add the rinsed bean sprouts. To maintain their crisp texture, it’s best to add bean sprouts after the kimchi has been cooking for a while.

Add 1/2 tablespoon of minced garlic to enhance the richness of the soup. The slight pungency of the garlic will blend with the broth, creating a deeper flavor.
