  • Occasion : Everyday
  • Cooking : Boil / Simmer
  • Servings : 3 servings
  • Difficulty : Beginner

Main Ingredients

  • 10 sheets of square fish cakes (Eomuk)
  • 3 pieces of Tteokbokki rice cakes (Garaetteok)
  • 1 serving of Udon noodles
  • 1 stalk of green onion (Scallion)

Spicy Seasoning Mix

  • 2 Tbsp Gochugaru (Korean chili flakes)
  • 1 Tbsp Gochujang (Korean chili paste)
  • 2 Tbsp Jin-ganjang (Soy sauce)
  • 1 Tbsp Oligodang (Corn syrup) or Sugar
  • 1 Tbsp minced garlic

Cooking Instructions

Step 1

First, let’s prepare the fish cakes. Cut the square fish cakes into three strips, then fold them into a wavy shape or stack 2-3 pieces and thread them onto skewers. This makes them easier to eat and helps them absorb the broth beautifully.

Step 1

Step 2

Next, skewer the rice cakes. If your rice cakes are hard, soak them in cold water for a bit or briefly blanch them in boiling water to make them tender. This ensures they cook through nicely in the soup.

Step 2

Step 3

Now, let’s make the flavorful broth! Pour 1 liter (L) of water into a large pot. Add 3 concentrated broth cubes (Coin Yuksu) and bring it to a boil. Once boiling, taste the broth and if needed, add 1 tablespoon of fish sauce to enhance the umami and adjust the saltiness. (You can substitute with Korean soup soy sauce if you prefer.)

Step 3

Step 4

When the broth is at a rolling boil, carefully add the prepared fish cake and rice cake skewers. Gently flip them over once to prevent the rice cakes from sticking together and to ensure even cooking.

Step 4

Step 5

Let’s make the spicy seasoning mix. In a small bowl, combine 2 tablespoons of Gochugaru, 1 tablespoon of Gochujang, 2 tablespoons of Jin-ganjang, 1 tablespoon of Oligodang (or sugar), and 1 tablespoon of minced garlic. Mix everything well until smooth.

Step 5

Step 6

Once the fish cakes and rice cakes are partially cooked, brush the prepared seasoning mix onto the fish cakes. Applying the seasoning directly onto the fish cakes before it fully dissolves in the broth allows the flavors to penetrate more deeply.

Step 6

Step 7

Now it’s time to add the udon noodles to make this dish extra satisfying. Gently push the skewers to one side of the pot and add the udon noodles into the cleared space. Gently separate the noodles as they cook to prevent them from clumping together.

Step 7

Step 8

Finally, let’s add the green onions for a fresh flavor and aroma. Chop the green onion finely. Once the udon noodles are cooked, sprinkle the chopped green onions over the soup for a beautiful presentation. (For an extra spicy kick, you can add thinly sliced Cheongyang chili peppers. Enjoy your hot and delicious Red Fish Cake Soup, or Eomuk Udon!)
