How to Make Delicious Korean Radish Salad
Here’s a recipe for Musaengchae Muchim, a refreshing and flavorful Korean radish salad, perfect as a side dish. Made with thinly sliced radishes, it offers a delightful crunchy texture and a balanced sweet, sour, and spicy taste.
Main Ingredients- 1/2 medium radish (approx. 500g)
- 1/2 stalk of green onion
- Pinch of salt (for curing radish)
Seasoning- 4 Tbsp Gochugaru (Korean chili flakes)
- 3 Tbsp Fish Sauce (Kkanari aekjeot recommended)
- 1 Tbsp Minced Garlic
- 2 Tbsp Sugar
- 2 Tbsp Sesame Seeds
- 1 Tbsp Vinegar
- 4 Tbsp Gochugaru (Korean chili flakes)
- 3 Tbsp Fish Sauce (Kkanari aekjeot recommended)
- 1 Tbsp Minced Garlic
- 2 Tbsp Sugar
- 2 Tbsp Sesame Seeds
- 1 Tbsp Vinegar
Cooking Instructions
Step 1
Start by preparing your fresh ingredients: the radish and green onion.
Step 2
Wash the radish, peel it, and then julienne it into strips about 0.3cm thick. Aim for a medium thickness that is neither too thin nor too thick. A helpful tip for easier slicing is to make a small flat base by trimming one side of the radish, then stand it upright to slice. Alternatively, a mandoline slicer can be used for uniformity and speed.
Step 3
Slice the green onion diagonally into bite-sized pieces. Using more of the green parts will add a nice color to the salad.
Step 4
In a large mixing bowl, combine the julienned radish and sliced green onions. Gently toss them together to mix the ingredients.
Step 5
Now, it’s time to add all the seasonings to create the delicious dressing. Add 3 Tbsp of fish sauce, 1 Tbsp of minced garlic, 2 Tbsp of sugar, 4 Tbsp of gochugaru, 2 Tbsp of sesame seeds, and 1 Tbsp of vinegar to the bowl.
Step 6
Gently mix and toss the ingredients with your hands until the seasonings are evenly distributed. Taste and adjust the seasoning as needed. Add a pinch of salt or an additional 2 Tbsp of fish sauce if necessary. It’s best to season it slightly on the saltier side initially, as the radish will release water and the flavors will mellow out. This ensures the salad remains flavorful even after sitting.
