Spicy Radish Kimchi Fried Rice (Kkakdugi Bokkeumbap)
Super Easy Kkakdugi Fried Rice Recipe for a Quick Meal
You can whip up a delicious fried rice using the kkakdugi (cubed radish kimchi) you have at home. It’s a super simple recipe that makes for a satisfying meal!
Ingredients- Ham: 1/2 bowl (approx. 100g), diced
- Well-fermented Kkakdugi (Cubed Radish Kimchi): 1/2 bowl (approx. 100g), chopped
- Olive Oil: 1 Tbsp
- Minced Green Onion: 1 handful (approx. 30g)
- Kkakdugi Brine: 2 Tbsp
- Cooked Rice: 2 ladles (approx. 200g)
- Sesame Oil: 1 Tbsp
- Toasted Sesame Seeds: a pinch
- Eggs: 2 (optional, for topping)
Cooking Instructions
Step 1
First, prepare the ham, which will add flavor to your fried rice. Dice the ham into small pieces, about 1cm cubes. You’ll need about 1/2 bowl’s worth.
Step 2
The star of this fried rice is the well-fermented kkakdugi, so let’s prepare it carefully. Chop the kkakdugi into bite-sized pieces. About 1/2 bowl’s worth, similar to the ham, is sufficient.
Step 3
Preheat a deep pan over medium-low heat. Add 1 Tbsp of olive oil. Add the minced green onions and slowly sauté until fragrant and lightly golden. Cooking the green onions until translucent and slightly browned will significantly enhance the aroma and flavor.
Step 4
Once the fragrant aroma of the green onions fills the air, add the prepared kkakdugi and diced ham to the pan. Stir-fry over high heat for about 1-2 minutes until the ham and kkakdugi are well combined and slightly cooked.
Step 5
When the ham and kkakdugi are cooked to a certain extent and the pan is hot, add 2 generous ladles of warm cooked rice. Gently break apart any clumps of rice with your spatula as you stir-fry.

Now, let’s add the seasoning to enhance the umami flavor of the fried rice. While the kkakdugi itself is flavorful, adding 2 Tbsp of kkakdugi brine will infuse the rice with a deeper, tangy-sweet taste and moisture. Taste and add a little more brine if needed.

Finally, drizzle 1 Tbsp of sesame oil around the edges of the pan to add a nutty aroma. To preserve its fragrance, it’s best to add sesame oil just before turning off the heat, as prolonged cooking can diminish its scent.

Stir everything together until well combined. Transfer the fried rice to a serving bowl and sprinkle with toasted sesame seeds for a beautiful garnish. It will look incredibly appetizing!

A perfectly fried egg is a must-have with this kkakdugi fried rice! Lightly grease a pan with oil and fry the eggs to your desired doneness, ideally with a runny yolk. Breaking the yolk and mixing it with the rice is pure bliss.
