Stew Ingredients

  • 4 small potatoes (approx. 400g)
  • 200g ham
  • 1/2 onion, thinly sliced
  • 800cc water (approx. 4 cups)
  • 1-2 pinches of black pepper

Spicy Seasoning Mix

  • 1 Tbsp gochujang (Korean chili paste, approx. 30g)
  • 1/2 Tbsp doenjang (Korean soybean paste, approx. 15g)
  • 3 Tbsp gochugaru (Korean chili flakes)
  • 2 Tbsp sugar
  • 2 Tbsp soy sauce (jin ganjang)
  • 1 Tbsp corn syrup (mulyeot)
  • 1 Tbsp soup soy sauce (guk ganjang)

Cooking Instructions

Step 1

The spoon measurements are based on a standard 8cc Korean rice spoon. Wash, peel, and cut 4 small potatoes (about 400g total) into roughly 2cm thick cubes. You can use any type of ham you prefer. Slice it to a similar thickness as the potatoes, or cut it thinner according to your preference.

Place the cut potatoes into a pot first, then add 800cc (about 4 cups) of water.

Turn on the heat and add all the seasoning ingredients listed for the ‘Spicy Seasoning Mix’ at once. Cook over medium heat until the potatoes are tender when pierced with chopsticks. (Note: 1 Tbsp of gochujang is approximately 30g, and 1/2 Tbsp of doenjang is approximately 15g.)

Once the potatoes are cooked, add the ham and sliced onion, and simmer for another minute. Finish by sprinkling 1-2 pinches of black pepper for a perfectly spicy and flavorful Potato and Ham Gochujang Stew! If the broth has reduced too much, add about 50cc of water at a time and adjust the taste and consistency to your liking.
