  • King oyster mushroom – 1
  • Fresh chives – Generous amount (more than a handful)

Spicy Seasoning Paste

  • Gochujang (Korean chili paste) – 3 Tbsp
  • Gochugaru (Korean chili flakes) – 2 Tbsp (adjust to your spice preference)
  • Doenjang (Korean soybean paste) – 2 Tbsp
  • Minced garlic – 1 Tbsp
  • Guk-ganjang (Korean soup soy sauce) – 1 Tbsp
  • Mirin (or cooking wine) – 1 Tbsp
  • Hanoi pho sauce – 1 Tbsp (optional, adds extra flavor)

Cooking Instructions

If using frozen pork offal, soak it in cold water to thaw completely. Slice the radish into thin, flat pieces.

In a pot, combine 1 liter of water with 8 dried anchovies. Bring to a boil over high heat to create an anchovy broth. Once boiling, remove the anchovies and set the broth aside.

Rinse the thawed pork offal thoroughly under running water. Slice it lengthwise into bite-sized pieces, about 1.5 cm wide.

Slice the onion thinly. Cut the scallion diagonally. Slice the king oyster mushroom into thin rounds, about 0.5 cm thick. Cut the chives into approximately 4 cm lengths.

Stir in the gochujang (3 Tbsp), doenjang (2 Tbsp), mirin (1 Tbsp), gochugaru (2 Tbsp), guk-ganjang (1 Tbsp), minced garlic (1 Tbsp), and Hanoi pho sauce (1 Tbsp). Use a spatula to break down any clumps of gochujang and doenjang, ensuring the seasonings are well dissolved into the broth.
