Cooking Instructions
Step 1
Prepare vegetables for potato sauté: Peel the potato and cut it into thin matchsticks. Soak the julienned potatoes in cold water for about 10 minutes to remove excess starch, then drain them thoroughly in a colander. Finely chop the green onion. Slice the onion and carrot into similar thin strips.
Step 2
Sauté the potatoes: Heat a generous amount of cooking oil in a pan over medium heat. Add the julienned potatoes and carrots and sauté until the potatoes become translucent and are almost cooked through. When almost done, add the remaining onion and green onion, and stir-fry briefly until the vegetables are tender. Season with salt. (Tip: Be careful not to overcook the potatoes, as they might break apart.)

Prepare ingredients for kimchi stew: Cut the pork into bite-sized pieces. Remove the core from the well-fermented kimchi and chop it into similar-sized pieces. Slice the green onion diagonally.

Cook the kimchi stew (Step 1): In a pot, combine the chopped kimchi, pork, and red pepper flakes. Add just enough water to cover the ingredients. Bring to a boil over high heat, then reduce the heat to medium and simmer until the kimchi and pork are tender.
