Stew Ingredients

  • Pork for stew (cut) 300g
  • Kimchi (fermented) 400g
  • Green onion 1 stalk
  • Korean chili pepper (Cheongyang) 4 pcs

Seasoning Ingredients

  • Minced garlic 1/2 Tbsp
  • Ginger powder 1 tsp
  • Salt 1 tsp
  • Sugar 1/2 Tbsp
  • Black pepper powder a pinch

Cooking Instructions

In a pot, add the 400g of fermented kimchi. Pour in 4-5 cups of water (about 800ml-1000ml), measured using a standard paper cup. Bring this mixture to a boil first to allow the kimchi to soften and create a flavorful base for the stew.

Finely chop 4 Korean chili peppers (Cheongyang peppers). Once the kimchi is boiling and has softened, add the 300g of pork cut for stew to the pot. Adding the chopped chili peppers now will enhance the spicy kick of the stew.

Now, add the seasoning ingredients to deepen the flavor of the kimchi stew. Mix in 1/2 Tbsp of minced garlic, 1 tsp of ginger powder, 1 tsp of salt, and 1/2 Tbsp of sugar to adjust the taste and enhance the aroma.

Prepare the green onion by washing it, removing the root end, and then slicing it diagonally into bite-sized pieces. When the kimchi stew appears to be nearly cooked, add the prepared green onions. Sprinkle in a pinch of black pepper powder. Continue to simmer for another 5 minutes to allow all the flavors to meld together.
