Spicy Pork and Tofu Stew
A Fiery and Flavorful Pork and Tofu Stew that Warms the Soul
A classic Korean comfort food that captures the hearts of many! This Pork and Tofu Stew is bursting with savory and spicy flavors.
Main Ingredients- Pork shoulder (for stew) 400g, sliced
- Medium-sized onions 2
- Green onion 1 stalk
- Cheongyang chili peppers 3
- Firm tofu 1 block
- Red chili pepper 1
- Minced garlic 2 Tbsp
- Ginger juice 1 tsp
- Soy sauce for soup (Gukganjang) 3 Tbsp
- Perilla oil 2 Tbsp
- Gochugaru (Korean chili powder) 2 Tbsp
- Anchovy broth 6 cups (or water)
Cooking Instructions
Step 1
Prepare the vegetables for the stew. Cut the tofu into bite-sized cubes. Slice the onions thickly. Slant-cut the green onions, Cheongyang chili peppers, and red chili pepper. If you enjoy more spice, feel free to add extra chili peppers.
Step 2
Heat a pot over medium heat and add 2 Tbsp of perilla oil. Add the sliced pork shoulder and stir-fry until the surface is lightly browned. Once the pork is partially cooked, add 3 Tbsp of soy sauce for soup, 1 tsp of ginger juice, and 2 Tbsp of Gochugaru. Stir well to coat the pork with the seasonings and continue to cook for another 2-3 minutes. This step significantly enhances the pork’s flavor.
Step 3
Pour in 6 cups of anchovy broth (or water) into the pot with the seasoned pork and bring to a boil over high heat. Once boiling, reduce the heat to medium-low and simmer for about 10-15 minutes, or until the pork is fully tender. Then, add the sliced onions and the prepared tofu to the pot. Gently stir to combine without breaking the tofu, and let it simmer for a few more minutes.
Step 4
Taste the stew and adjust the seasoning with salt if necessary. Finally, add the sliced green onions, Cheongyang chili peppers, and red chili pepper, along with 2 Tbsp of minced garlic. Simmer for another minute to allow the flavors to meld. The pungent kick of the chilies and the aroma of the green onions will create a deeply satisfying broth.
Step 5
This stew is perfect served hot with a bowl of rice. Its spicy broth is excellent for soothing a heavy stomach and can be enjoyed by mixing it with rice. Enjoy a hearty and fulfilling meal with just one pot!
