Stew Ingredients- 1/4 head of well-fermented kimchi (small)
- 1 ladleful of kimchi brine (approx. 100ml)
- 130g pork (neck or belly recommended)
- 3 bowls of water (approx. 600ml)
Seasoning & Flavoring- Pinch of black pepper
- Fish sauce or soy sauce (to taste)
- Sugar (optional, if kimchi is very sour)
- Pinch of black pepper
- Fish sauce or soy sauce (to taste)
- Sugar (optional, if kimchi is very sour)
Cooking Instructions
Step 1
Chop the kimchi into bite-sized pieces (about 2-3 cm). Cut the pork into similar bite-sized pieces. In a pot, combine the chopped kimchi, pork, and one ladleful of kimchi brine. If the kimchi is very sour, add a tiny pinch of sugar. Season lightly with black pepper.
Step 2
Mix all the ingredients in the pot with a spatula. Stir-fry over high heat for 1-2 minutes, allowing the pork and kimchi to meld together. This sautéing step enhances the pork’s flavor and softens the kimchi.
Step 3
Pour in 3 bowls of water (about 600ml) to cover the ingredients. You can adjust the amount of water based on your preference for broth consistency. Bring the stew to a boil over high heat.
Step 4
Once the stew is boiling, reduce the heat to medium and simmer for 10-15 minutes, or until the kimchi is tender and the broth has developed a rich flavor. This simmering time is crucial for depth. Taste the stew and adjust the seasoning with fish sauce or soy sauce as needed to achieve your desired flavor. Your delicious Pork Kimchi Stew is now complete!
